Can you use other types of Potatoes?
If you like, you can use red potatoes. However, you won’t get the buttery richness that Yukon Gold potatoes provide. In general, russet potatoes have too much starch for this kind of recipe to be as successful.

- Be sure to adjust the oven racks in your oven so that the potatoes will brown well.
- Double-check that your baking dish is appropriate for the 500-degree temperature of this recipe. Not all glass dishes will work at those temps.
- Flip the potatoes at the halfway point with a spatula to fully cook the potato chunks.

- Yukon Gold potatoes
- Butter
- Extra-virgin olive oil
- Thyme
- Rosemary
- Salt
- Ground pepper
- Vegetable broth or chicken broth
- Garlic
How to make Melt-In-Your-Mouth Melting Potatoes:
Step 1. Preheat your Oven to 500 degrees F and make sure your oven rack is positioned in the upper third slot for perfect browning and cooking.
Step 2. In a large mixing bowl, add your cut potatoes, butter, oil, thyme, rosemary, salt, and pepper. Toss till everything is fully coated in all the amazing ingredients
Step 3. Arrange in an even layer in a 9×13 baking dish (do not use glass unless it is oven safe)
Step 4: Slide the baking dish in the oven and roast for 30 minutes.
(Flip one time once it turns a golden brown)
Step 5: After 30 minutes, add the broth and garlic.
Continue roasting your Melting Potatoes until the broth is fully absorbed by the potatoes and the skin has a rich, golden brown color. About 15 additional minutes.

- 2 tbsp of melted butter
- 2 tbsp extra-virgin olive oil

- 1 tsp chopped fresh rosemary

- ½ tsp ground pepper
- 1 cup low-sodium vegetable broth or chicken broth
- 5 cloves garlic, peeled and smashed
