You’ll need toothpicks to keep the chicken closed. That’s before you wrap it in bacon. Once you bacon-wrap it, the stuffing will stay inside even if you don’t prick it with toothpicks.
Should I cover the chicken in the oven or not?
You don’t have to. Once your bacon-wrapped stuffed chicken is in, go hands-free. And because we have bacon outside, we want it to get nice and crisp. So, no covering.

Ingredients:
- Bacon
- Boneless skinless chicken breasts
- Onion
- BBQ sauce
- Olive oil
- Salt and pepper to taste
Instructions:
Step 1. Cook 8 of the slices of bacon until crispy.
Step 2. Heat 1 tbsp of olive oil in a skillet over medium-high heat.
Step 3. Add the onions to the skillet, and cook until beginning to soften.
Step 4. Preheat the oven to 400 degrees.
Step 5. Crumble the cooked bacon, and place it into a small mixing bowl.
Add the cooked onions.
Then, half of the BBQ sauce to the bowl.
Then, stir to combine.
Step 6. Apply salt and pepper to taste to both sides of the chicken breasts.
Step 7. Place a tablespoon of the bacon mixture into the center of the chicken breast, and roll it tightly.
Step 8. Wrap an uncooked piece of bacon around the outside of the rolled chicken breast, and place it on a baking sheet.
Step 9. Repeat steps 8 and 9 untill you have stuffed and wrapped all of the chicken breasts.
Step 10. Brush the chicken breasts with the remaining BBQ sauce.
Step 11. Bake for 20 minutes.

- ½ c. Sugar free BBQ sauce divided

- Salt and pepper to taste

Instructions
