One box of Butter Yellow Cake mix
1 C water
1/3 C unsalted butter, softened
Three large eggs
1 Cupcake pan
Cupcake liners
Vanilla Frosting
2 C unsalted butter, softened
4 ½ C powdered sugar
2 tsp pure vanilla extract
3 – 6 Heavy whipping cream
One medium ice cream scooper
1 – 21oz Blueberry pie filling
1 – 13.5 oz graham cracker crumbs
How to Make Blueberry Pie Cupcakes
There are just a handful of instructions for baking and decorating these gorgeous southern cupcakes. Let’s take a look at what you need to do to make a batch.
First Step: Preheat the oven to 350 degrees and line the cupcake pan with the muffin liners and set aside.
Second Step: Using a hand or standing mixer, mix together all ingredients until combined and mixed well. You will follow the directions on your cake mix batter.
Third Step: Scoop ¾ batter into the liners using a measuring cup or large cookie scoop.
Fourth Step: Bake the cupcakes in the oven for 19 minutes or until a light golden brown. Use a toothpick to make sure the cupcakes are fully cooked.
Fifth Step: Allow cooling completely on a cooling rack.
Vanilla Frosting Directions
First Step: Using a standing mixer, combine together the butter, powdered sugar, heavy whipping cream, and vanilla until smooth and stiff with peaks.
Second Step: Once your frosting is ready, you can frost your cooled cupcakes. Don’t frost them while they are hot, or the frosting will melt.
Building the cupcake directions:
First Step: Scoop some frosting using the ice cream scoop onto the cupcakes.
Second Step: Pour the box of graham cracker crumbs into a large bowl.
Third Step: Coat the frosting into the crumbs. You can roll the cupcake around on a plate of graham crackers.
