Step 1. Add some olive oil to a skillet over medium high heat and cook the vegetables until becoming tender.

  • ½ Avocado diced
  • ½ C. Tomatoes chopped
  • Sour cream and chopped parsley for garnish
  • Olive oil
  • Salt and pepper to taste.
