Why is the meat in my cabbage roll soup hard?
The meat may have been overcooked. Overcooked meat drains juices and moisture, resulting in hard or tough meat.
Why is my cabbage soup bitter?
Cabbage contains a natural compound that makes it slightly bitter. You can make it much less so by soaking the chopped cabbage in water for half an hour and draining it well. Another option instead is adding a small amount of lemon or sugar.
