Sweet and tangy, this recipe for Chicken Bacon Pineapple Kabobs is a great recipe for a hot summer’s day.

Which cut of chicken is best for kebabs?
Boneless skinless chicken breasts are best for pineapple chicken kebabs, although boneless skinless chicken tenders will work as well. You want the chicken pieces to be cut into uniform chunks so they will all cook at the same rate.
Why are chicken kebabs dry?
Chicken kebabs will be dry if you overcook them. Use a meat thermometer to test the internal temperature of the chicken so that it doesn’t over cook. Chicken should be cooked until it reaches 165 degrees.
How do you keep kebabs moist?
To keep your kebabs moist, use a meat thermometer to ensure you do not over cook them. Also, using sauce to baste them generously can help trap moisture in the chicken.
How to serve Chicken, Bacon, Pineapple Kebabs?
You can pass out the kebabs and let everyone dig in with their bare hands. Serve these pineapple kebabs atop a bed of rice for an authentic meal.

Be sure that you cut the chicken, pineapple, and veggies into uniform pieces so that they all tend to cook at the same rate.

Ingredients:
- Chicken breasts
- Pineapple
- Red bell peppers
- Onion
- Bacon
- Pineapple juice
- Cornstarch
- Brown sugar
- Soy sauce
- Skewers
How to make Chicken Bacon Pineapple Kabobs:
Step 1. Wrap each piece of pineapple and chicken with a piece of bacon.
Step 2. Thread pieces of red pepper, onion, bacon-wrapped chicken, and pineapple on the skewers.

Then, add onion, bacon-wrapped chicken, and pineapple.
Set aside.
Step 3. Preheat the grill.
Step 4. In a saucepan on the stove, bring the pineapple juice, cornstarch, brown sugar, and soy sauce to a boil. Reduce to a simmer and cook for 5 minutes. Let cool.

Step 5. Place the skewers on the grill, and cook for 5-6 minutes per side.
Then basting with the sauce as you do.
Step 6. Grill until the chicken is cooked through and the bacon is crispy.

- 2 lb. Chicken breasts cut into bite sized pieces
- 1 Pineapple cut into bite sized chunks
- 2 Red bell peppers cut into large pieces

- ½ C. Brown sugar
- 3 Tbsp. Soy sauce

Instructions

Can I make ahead Chicken, Bacon, Pineapple Kebabs?
This recipe is delicious, but it is definitely one that should be cooked right before you want to eat it. It will taste okay as leftovers, but it’s much better right off of the grill.
Leftovers
