Step 1. Preheat the oven to 350 degrees.
Step 2. Bring the cauliflower in water to a boil over medium-high heat on the stove.
Then, add minced garlic.
Continue to boil and cook for 15 minutes.
Step 3. Drain the cauliflower and place it into a blender or food processor.
Step 4. Add the heavy whipping cream, chives, and salt and pepper to taste to the blender or food processor.
Then, add whipped butter.
Blend until slightly chunky still, and well combined.
Step 5. Place the cauliflower mixture in an even layer at the bottom of a well-greased baking dish.
Step 6. Top the cauliflower with the crumbled bacon and shredded cheese.
Bake for 5 minutes until the cheese is melted and serve topped with chopped green onions for garnish.
