Not a huge fan of cucumbers? Have trouble digesting tomatoes? No problem! Both veggies can be swapped for others – such as peppers, spinach, and avocado. And if you are vegan, simply replace the shredded Parmesan with vegan cheese or tofu.
What You Need:
- Baby cucumbers sliced
- Cherry tomatoes cut in half
- Onion thinly sliced
- Shredded Parmesan cheese
For the dressing:
- Balsamic vinegar
- Olive oil
- Italian seasoning
- Sugar
- Minced garlic
- Pepper to taste
How To Make Cucumber and Tomato Salad:
Step 1. In a large bowl, toss together the cucumbers, tomatoes, and onions.
Then, add the onions.
Step 2. In a smaller bowl, whisk together the ingredients for the dressing.
Adding the balsamic vinegar.
Adding the Olive oil.
Adding the sugar.
Adding the Italian seasoning.
Adding the Minced garlic.
Step 3. Pour the dressing over the vegetables and toss to coat well.
Step 4. Stir in the shredded parmesan and chill before serving if desired.
