Step 1. Preheat the grill to 400˚F. Place ears of corn until grilled for about 12 minutes, turning around every few minutes to ensure even grilling on each side.
Step 2. In a small bowl, mix together sour cream, mayonnaise, cotija cheese, garlic, lime zest and juice, and cilantro.
Step 3. Spread mixture evenly over each ear of corn, then sprinkle with chipotle chili powder. Top with extra cotija cheese and chopped cilantro and serve.

- ¼ cup sour cream
- ¼ cup mayonnaise
- ½ cup of cotija cheese, crumbled
- 2 cloves garlic, crushed
