Greek Style Roasted Lemon Butter Potatoes

When it comes to the way potatoes can be made, this recipe is one of my favorites. There is something special about Lemon Butter Roasted Potatoes. I am not sure if it is the lemon, or if it is the Garlic and butter that is my favorite, I am betting it is a combination of all of that.

That is what happened the first time I made this recipe. Now I have obviously learned to make a double batch. I would advise you to do the same. If nothing else, you already have a side for the next meal or an addition for a casserole the next night.
And although this sounds like a super fancy gourmet side dish, it is incredibly easy to pull together.

What makes these Greek Style Lemon Butter Potatoes so good?
That could truly be any number of things. The recipe is super simple to follow, it is sure to be everyone’s favorite, and the potatoes do not take that long to make. Plus, they are budget friendly also.
Which type of potato is best to use when making Greek Stye Lemon Butter Roasted Potatoes?
You do want a sturdy potato, versus one that becomes mushy rapidly. So, look for the starchier type of potato such as Yukon Gold or Russets. They become crispy on the outside and tender on the inside.
How can I make these potatoes come out crispier?
First, you do want to be sure that all your potatoes are roughly the same size. Secondly, one thing that does help is to coat all the potatoes in some type of fat, this could be butter, Olive Oil, or a combination of the two, which is what I use.
Should I parboil the potatoes first?
That is not a mandated step. Trust me, it does help them to cook faster. But I do need to say that parboiling will make it more difficult to get the outside crispy if that is what you want.
Ingredients:
- Baby golden potatoes cut in half lengthwise
- Butter melted
- Chicken broth
- Lemon juice
- Oregano
- Rosemary
- Minced garlic
- Parmesan cheese grated
- Salt and pepper to taste
How to make Greek-Style Roasted Lemon Butter Potatoes:
Step 1. Preheat the oven to 375 degrees.
Step 2. Pour the butter into a 9×13 baking dish
Step 3. Add the sliced potatoes on top of it.
Step 4. In a bowl, add the chicken broth.
Step 5. Then, add lemon juice.
Step 6. Then, add rosemary.
Step 7. Then, add oregano.
Step 8. Finally, add minced garlic, salt, and pepper to taste.
Step 9. Pour the mixture over the potatoes
Step 10. Toss to coat completely.
Step 11. Cover the baking dish with tin foil and bake for 40 minutes.
Step 12. Remove the foil, sprinkle on the parmesan cheese and bake for another 30 minutes or until done to your liking.
Serve warm!

Ingredients
- 3 lbs. Baby golden potatoes cut in half lengthwise
- ¼ C. Butter melted
- ⅔ C. Chicken broth
- 1 Tbsp. Lemon juice
- 1 tsp. Oregano
- ½ tsp. Rosemary
- 3 tsp. Minced garlic
- ½ C. Parmesan cheese grated
- Salt and pepper to taste

Instructions
- Preheat the oven to 375 degrees.
- Pour the butter into a 9×13 baking dish and add the sliced potatoes on top of it.
- In a bowl, combine the chicken broth, lemon juice, rosemary, oregano, minced garlic and salt and pepper to taste.
- Pour the mixture over the potatoes, and toss to coat completely.
- Cover the baking dish with tin foil and bake for 40 minutes.
- Remove the foil, sprinkle on the parmesan cheese and bake for another 30 minutes or until done to your liking.

How can I store the leftover potatoes?
Be sure that the food is at room temperature and then place it into an airtight container. The container should then be placed into the refrigerator for up to 4 or 5 days.
How can I reheat the potatoes?
The best method that I have found is to place them on a baking sheet in a low-temperature oven. This will also help to crisp them up again. Another method would be to place them in the microwave and heat to the desired temperature.
