Can I substitute a different meat?
You could absolutely substitute a different type of meat. You could use Ground Sausage, Kielbasa, Ground Turkey or Ground Pork.
What type of peppers should I use?
I use bell peppers. I have used just green peppers, but at times, I like to switch it up and add in some yellow pepper, red pepper and orange pepper.
Can I use some vegetables other than peppers?
There is no reason you could not. Zucchini, mushrooms, or eggplant all make a great substitutes.
Do I need two skillets?
You could use two skillets or just one large skillet. I like easy so I use one large and that way all the flavor stays together.
What type of Rice should I use for this dish?
There are many types that you could choose from, jasmine, Basmati, or long grain. I prefer to use long-grain rice. It just works best for me.
Could I use Cauliflower rice instead of long grain?
Yes, that is a great choice and will make the dish a little healthier also. With the similar texture, it is difficult to tell the difference between long-grain or Cauliflower rice.

- Ground beef
- Onion
- Red bell pepper
- Green bell pepper
- Yellow bell pepper
- Minced garlic
- Dried oregano
- Dried basil
- Salt and pepper
- Diced tomatoes
- Beef broth
- Rice
- Shredded cheddar cheese
How to make Ground beef and peppers skillet:
Step 1. Add the ground beef, onion, and bell peppers to a skillet over medium-high heat on the stove.
Step 2. Add bell peppers to a skillet over medium-high heat on the stove.
Step 3. Then, add the ground beef.
Step 4. Cook until the vegetables have softened and the meat is completely browned. Drain any excess fat.
Step 5. Place the minced garlic.
Step 6. Then, add oregano.
Step 7. Then, add basil and salt, and pepper to taste.
Step 8. Once done stir to combine, sauteing for another 30 seconds.
Step 9. Stir in the diced tomatoes.
Step 10. Then, add the beef broth.
Step 11. Then add rice.
Step 12. Bring the mixture to a light boil, reduce the heat to a simmer, and cook covered for 20 minutes.
Step 13. Sprinkle the cheese on top of the mixture, place the lid back on the pot, and cook until the cheese has melted.

- ½ Red bell pepper chopped
- ½ Green bell pepper chopped
- ½ Yellow bell pepper chopped
- 2 tsp. Minced garlic
- ½ tsp. Dried oregano
- ½ tsp. Dried basil
- Salt and pepper to taste
- 1 Can diced tomatoes
- 2 C. Beef broth
- ⅔ C. Rice
- 1 ½ C. Shredded cheddar cheese

Instructions
- Add the ground beef, onion and bell peppers to a skillet over medium high heat on the stove. Cook until the vegetables have softened and the meat is completely browned. Drain any excess fat.
- Place the minced garlic, oregano, basil and salt and pepper to taste into the pot and stir to combine, sauteing another 30 seconds.
- Stir in the diced tomatoes, beef broth and rice.
- Bring the mixture to a light boil, reduce the heat to a simmer and cook covered for 20 minutes.
- Sprinkle the cheese on top of the mixture, place the lid back on the pot, and cook until the cheese has melted.

Any side dish will work well. I have served this with potatoes, rice and also pasta. However, it could be served as a complete meal if you choose.

Once the food is completely cooled off, it should be placed in an airtight container and then into the refrigerator. It will last for up to 4 days. It can also be frozen for up to 3 months.
