Ingredients for Weeknight Salisbury Steak:
For the steaks:
1 ½ lb. Ground beef
1 Large egg
1 tbsp. Minced onion
½ C. Panko bread crumbs
½ tsp. Garlic powder
Salt and pepper to taste
2 Tbsp. Olive oil
For the gravy:
1 Onion sliced into rings
1 C. Mushrooms sliced
2 Tbsp. Flour
2 C. Beef broth
1 tsp. Minced garlic
2 Tbsp. Butter
Salt and pepper to taste
Ingredient Notes & Substitutions
Panko bread crumbs: Panko bread crumbs are really flaky and light compared to what you’d call “regular” bread crumbs here. The result is a lighter patty that’s also more tender. You can use regular bread crumbs instead, but the texture of the steaks will change.
Minced onion: You can use yellow or white onions as you see fit, although yellow onions tend to be the one people grab when cooking with ground beef.
Flour: Flour acts as a thickener for sauces and gravies.
Butter: Try to use unsalted here to help control the overall sodium level in the final dish.
How to Make It
Step1: Mix together the ground beef, egg, minced onion, bread crumbs, garlic powder and salt and pepper to taste until well combined. You can see it’s already starting off like a form of meatloaf.
Step2: Preheat the oven to 350 degrees Fahrenheit.

Step3: Form the meat mixture into four even patties, and heat the olive oil in an oven-proof skillet over medium high heat. Make the patties oblong if you want to imitate TV dinners.
Step4: Sear the patties on both sides in the heated skillet, and set aside. You’re not done cooking the patties, though.
Step5: In the same skillet, add the butter and reduce the heat to medium.
Step6: Add the mushrooms and onions to the skillet, and saute until they become tender.
Step7: Stir in the minced garlic, and add salt and pepper to taste. Saute for 30 seconds.
Step8: Sprinkle the flour over the mixture in the skillet, and saute for 2 minutes.

Step9: Slowly whisk in the beef broth until well combined. Simmer the sauce until it begins to thicken.
Step10: Return the patties to the skillet, spoon the gravy over the top, and bake for 25 to 30 minutes.
Tips for Success
Use 80/20 ground beef here. That’s lean enough to not make the patties overly greasy but also fatty enough to provide some very good flavor. You can also use 85/15 if you’re trying to cut calories and want to make a healthy weeknight Salisbury steak version.
This is a recipe where you really want to follow mise en place, or the practice of having everything ready. Do any measuring or cutting first, and then start cooking. The mising and sauteing stages can move quickly.
Storage & Reheating
Leftovers from Salisbury steak need to stay in the refrigerator. Let them cool, and within two hours of cooking being finished, place them in an airtight container. Use them up within three or four days. You can reheat them in the oven or on the stove, covered, with a little extra water.
You actually can freeze Salisbury steak, but do so only with cooked, leftover steak that’s cooled. Place each steak with some gravy in a freezer-friendly container and use up within three months. Let the frozen steak thaw in the refrigerator and then warm up in an oven. Always ensure that you check the steak with an instant-read thermometer to ensure you’ve cooked the reheated steak to 165F internally.
