Now, I enjoy making food for all of the holidays. St Patrick’s Day is one of my ultimate favorite holidays because it’s a great time to let loose with friends and family. I always want to make sure that I bring some kind of dessert that everyone is going to rave about. I’m so glad I came up with this awesome Saint Patrick’s Day dessert because I think you’re going to love it too.

So the next time you were looking for a cookie bar recipe, you should really consider making this dessert. M&M cookie bars are so easy and leave a lasting impression on anyone who tastes them. Plus, they’re great to make in advance and have them whenever you have a chocolate craving.

Variations To Cookie Bars 

There are many different things you can do to change these chewy homemade cookie bars. Feel free to add in some of your favorite ingredients to change the flavor and look of the cookies.

  • Nuts –  one thing that always tastes good in cookies is some chopped nuts.  Walnuts, almonds, and pecans would all be great options. 
  • White chocolate – add a few chocolate chips to the batter to add some extra character and flavor. I would add 1/4 to 1/2 cup of your favorite white chocolate chips.
  • Melted chocolate – melt your favorite chocolate on top of the M&M cookie bars. It will add a lovely texture and depth to the cookies. It tastes really good too.

Can I Swap Out Colors Of M&M’s In Cookie Bar 

Yes, you can swap out the colors of M&Ms you put into these cookie bars. That is wonderful because then you can adjust them to fit any holiday that you are baking for. Red and green for Christmas. Pink and white for Valentine’s Day. Or any other combination that you’re looking for would be more than fine when you make these delicious M&M cookie bars.

Freezing Cookie Bar Tips 

Freezing Cookie Bars is a great way to save them and have them on hand whenever you need a fast and simple dessert. For the best results, you will need to allow the cookies plenty of time to cool down. After the cookies have cooled all the way you can cut them up and wrap them in plastic wrap or aluminum foil. Then put the wrapped cookies inside of a freezer-safe container or a freezer bag. The cookies will last in the freezer for up to three months. You can eat the cookies straight out of the freezer or place them on the counter for an hour or two until they have defrosted. Or if you want a cookie should be warm and fresh, pop it in the microwave wrapped in a paper towel for 15 to 20 seconds.

How to Know When Cookie Bars Are Done 

You will know the M&M cookie bars are done baking is by inserting a toothpick into the center of the cookies. When you take out the toothpick, if there is still batter then they need to bake for a little bit longer. However, if the toothpick is dry, and that means the cookies have finished baking.

Another thing to look for while you’re baking cookies is that the sides of the cookie bars pull away from the pan. As they begin to pull away, that is a pretty good indication that they are done or almost done baking.

Ingredients

You are bound to be impressed that you only need ten ingredients to make these M&M cookie bars. Keep in mind it is best to soften the butter and let the eggs reach room temperature before you begin making the cookies. This will give you a lot better results and the cookie batter we’ll go together much smoother.

  • Sweet cream butter, softened
  • Light brown sugar, packed
  • Sugar
  • Large egg
  • Pure vanilla extract
  • Baking soda
  • Baking powder ¼ tsp kosher salt
  • Flour
  • Green M&M’s
  • Semi sweet chocolate chips

How To Make M&M Cookie Bars

Step 1: Heat the oven to 350 degrees Fahrenheit.  Then line and 9 by 9 baking pan with parchment paper.

Step 2:  Use a stand mixer cream together the butter, sugar, eggs, brown sugar, and vanilla in the bowl.

Step 3:  Next, If you combine the flour, baking soda, baking powder, and salt in a medium-sized bowl. Use a whisk; to combine the ingredients well.

Step 4:  Very carefully combine the dry ingredients with the wet ingredients. Mix until thoroughly combined.

Step 5:  Using a spatula, fold in the M&Ms and chocolate chips. 

Step 6:  Pour the batter into a baking dish and spread evenly with a spatula.

Step 7:  A few extra M&M’s on top of the cookies as well as some chocolate chips. Bake the M&M cookie bars for 20 to 25 minutes or until the cookie bar is fully baked.

Step 8:   Place the cookies on a cooling rack after you remove them from the oven. Let them cool for several minutes, then slice, and enjoy!

  • ½ C unsalted sweet cream butter, softened
  • ½ C light brown sugar, packed
  • ¼ C sugar
  • 1 large egg
  • ½ tsp pure vanilla extract
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • 11/2 C flour
  • ¾ C green M&M’s
  • ¾ C semi sweet chocolate chips

Instructions

  • Then in a stand mixer or large bowl, cream your softened butter, sugar, brown sugar, eggs and vanilla.
  • In a bowl whisk your dry ingredients: flour, baking soda, baking powder, and salt.
  • Slowly mix in the dry ingredients to the wet, until fully combined.
  • Fold in your M&M’s and chocolate chips.
  • Pour into the baking dish and make sure evenly spread.
  • Top with extra M&M’s if you want and chocolate chips.
  • Bake for 20-25 minutes or until the cookie bar is fully cooked.
  • Remove and place on the cooling rack. Once cooled, slice and serve.
