Variations to Recipe
Here are a few of my favorite ideas that we love to try with this cake. They’re all a little fun and different and add some extra character to the cake.
- Add one teaspoon of almond extract for an intense almond flavor. It goes great with the mint and chocolate.
- Add 1/2 cup of your favorite nuts to the cake mix. Walnuts or pecans are my favorites, but you could add any kind of nut that you like.
- Chop up some Andes mints candy and mix into the cake. You can also add them as a garnish to add some extra fun.
- Sprinkle some nuts on top of the chocolate ganache.

Storing the Cake
You can store this mint chocolate cake at room temperature or cold. If you store the mint cake at room temperature, it will last around two days. However, if you store it chilled in the refrigerator, it will last up to four days. It needs to be kept in an airtight container no matter how you store it.
Can You Freeze
Yes, you can freeze this mint Texas chocolate cake. After you let the cake cool and you’ve added the ganache frosting, simply cut it in the individual slices and put it in freezer-safe storage containers or leave it as an entire cake. Cover the cake with plastic wrap or aluminum foil. Then put the cake inside of a freezer-safe container. The cake will last up to three months in the freezer. You can eat it frozen, or you can thaw out until it’s defrosted.
