One Pan Oven Roasted Potatoes, Sausage and Peppers

Prep Time: 15 minutes | Cook Time: 45-50 minutes | Servings: 4

Ingredients:

1 lb. Smoked sausage sliced into rounds

1 Onion Chopped into larger wedges

5 Potatoes chopped into chunks

Olive oil

Paprika, thyme, Salt, and pepper to taste

Optional: 2 large red peppers, seeds removed and cut into 1 inch pieces (add them on Step 3. )

How to make One-Pan Oven Roasted Potatoes, Sausage, and Peppers:

Step 1. Preheat the oven to 400 degrees.

Step 2. Line a baking sheet with aluminum foil.

Step 3. Place the onion, potato, and sausage on the baking sheet.

Step 4. Drizzle the mixture with olive oil and season with thyme, paprika, salt, and pepper to taste. Toss to coat.

Step 5. Bake for 45-50 minutes until done to your liking.
