Why do I love Parmesan Roasted Red Potatoes?
- Potatoes are a wonderful addition to almost any meal.
- These have the flavorings of onion and parmesan, which offer a nice balanced profile.
- The prep work is fast and easy, so it’s a simple weeknight side dish.
- Scaling the ingredients up to double or triple the recipe and bring to a holiday meal is just as easy and always a hit with everyone from kids to grandparents!
Should I boil potatoes before roasting?
There is no need to boil the potatoes first. Roasting the red potatoes will bring out a nice flavor, leave them tender to bite into, and keep you coming back for seconds.
Should red potatoes be peeled before baking?
Roasted parmesan red potatoes benefit from the delicious skin on the tender red potatoes. A good rinse before cooking will do the job and there is no need to peel red potatoes.
Why aren’t my roasted potatoes crispy?
If your potatoes are crisping up it may be there was a bit too much starch before cooking. Try soaking the potatoes in water while cutting them up next time. Then some of the excess starch will rinse off and they should crisp nicely.
How to serve Parmesan Roasted Red Potatoes?
Roasted parmesan red potatoes can be served as a side dish with any entrée or be the star of the show when paired with a summer salad. They are delicious hot from the oven or reheated.
Cooking Tips:
- Soak the potatoes as you are cutting them to remove some of the excess starch and get a nice crisp roasted potato.
- Grate your own parmesan for the freshest possible taste.
- Mix the ingredients ahead of time to save time while you prepare the rest of your meal.
- Dress them up or down depending on your meal.
- Be sure the oven is preheated when you first place the potatoes in.
- That last few minutes of uncovered cooking finalizes the crispy texture and makes them really amazing.
Variations:
- Try a mix of potatoes – in addition to red potatoes there are blue or purple and small white or yellow potatoes that work great with this recipe. Just be sure to select a small, creamy texture potato to roast.
- Swap the onion mix for a ranch packet and enjoy a parmesan and ranch potato dish with the same preparation.
- Change the flavor profile by using either a mix of Romano and parmesan, or swap them altogether.
