Why Do We Love Potato Kielbasa Skillet?
What kid doesn’t like hot dogs? And potatoes? Or bacon? And it’s not just any hot dog dish; it’s a flavor-packed skillet that adults love as much as kids.
And since it only uses one pot, NO EXTRA CLEANUP! Oh, God, I live for this!
I have one more thing that I love about this recipe. And it’s an all-mom thing, I bet! the dish is loaded with healthy veggies – hello, kale! It has so much nutritional value that I don’t feel guilty serving it to my kiddos.
What is Kielbasa?
Kielbasa is a Polish sausage. It can be all-pork, pure beef, or an amazing combo of both. It has some lovely ground-up spices that give it a complex flavor. It’s a pre-cooked sausage in the shape of a U.
So, if you look in the deli section, it’ll look like a big roll of beef or pork.
How Should I Store Potato Kielbasa?
I honestly doubt there’ll be any leftovers. It’s just SO good! But if you do, transfer them to an airtight box and store them in the fridge. It’ll keep for five days.
When you want to reheat it, just pop it in the oven and bake it for a few minutes. You can also heat in a skillet over your stovetop – and voila! You’ll have that amazing flavor again.
Can I Use an Instant Pot?
Yes! If you want to make this dish super-fast, use an Instant Pot. First, cook the onion and sausage on the sauté setting. Then add all the rest of the ingredients and cook for five minutes of high. Use quick release, and dinner is served!
What Can I Serve this With?
We love it as is! And when our hunger is REALLY high, we add a few pieces of bread (to mop up that yummy sauce). But it’s also great with mashed potatoes or roasted vegetables.
Ingredients:
- Red potatoes cubed
- Kielbasa sliced
- Water
- Brown sugar
- Apple cider vinegar
- Dijon mustard
- Italian seasoning
- Onion chopped
- Chopped kale
- Olive oil
How to make Potato Kielbasa Skillet:
Step 1. Place the cubed potatoes and the water in a microwave-safe bowl. Cover and cook for 4 minutes in the microwave. Drain and set aside.
Step 2. Add the olive oil to a large skillet over medium-high heat on the stove.
Step 3. Saute the onions and sausage until the onions have softened.
Step 4. Mix the potatoes into the skillet and saute for an additional 5 minutes.
Step 5. In a bowl, whisk together the brown sugar, apple cider vinegar, dijon, and Italian seasoning.
Step 6. Pour the sauce into the skillet and stir to combine.
Step 7. Add the kale to the skillet and cook until wilted.
Serve warm!

What Variations Can I Make?
It is a great base dish with lots of flavors. So, when you want to jazz it up, you can do it however you like.
- Trade sweet potatoes for the red potatoes
- Add some bell peppers or mushrooms
- Serve it with a dollop of sour cream, or garlic mayo
- Try different kinds of sausage, like chicken or turkey
- Add some spicy chili flakes to kick it up a notch!
Tips and Tricks
- I really had to say it. Please use FRESH, REAL BACON! The flavor is the bomb!
- Always sauté the onions and sausage before adding them to the dish. It will help bring out all of those yummy flavors.
- Use a large pan, so everything has room to cook evenly.
- If you want more sauce, add a bit of vegetable broth and reduce until desired consistency.
