Potato Kielbasa Skillet

This smoky Potato Kielbasa Skillet is a hearty home-style recipe, an all-in-one meal.
OMGosh… YUM! I love sausage, this easy recipe looks like the perfect weeknight meal!
One tip. Cook the sausage first, remove it, cook the rest and add the meat back in when it’s ready.
Prep Time: 15 minutes | Cook Time: 20-25 minutes | Servings: 4
Ingredients:
4 Red potatoes cubed
1 Pack Kielbasa sliced
¼ C. Water
2 Tbsp. Brown sugar
2 Tbsp. Apple cider vinegar
1 Tbsp. Dijon mustard
1 tsp. Italian seasoning
½ Onion chopped
3 C. Chopped kale
1 Tbsp. Olive oil
Instructions:
Step 1. Place the cubed potatoes and the water in a microwave-safe bowl. Cover and cook for 4 minutes in the microwave. Drain and set aside.
Step 2. Add the olive oil to a large skillet over medium-high heat on the stove.
Step 3. Saute the onions and sausage until the onions have softened.
Step 4. Mix the potatoes into the skillet and saute for an additional 5 minutes.
Step 5. In a bowl, whisk together the brown sugar, apple cider vinegar, dijon, and Italian seasoning.

Step 6. Pour the sauce into the skillet and stir to combine.
Step 7. Add the kale to the skillet and cook until wilted.
