Rich and flavorful fideo and chicken soup with tomato paste and garlic! Absolutely delicious!
I’m a big lover of mexican gastronomy, my favorite ones are Mexican Tater Tot Casserole, Mexican Street Corn Chicken Tacos and Mexican Stuffed Shells.
I make this Sopa de Fideo With Chicken once a month and it’s always a hit! My husband loves it too!
Ingredients:
6 Chicken drumsticks skin on
4 Tbsp. Olive oil
7 oz. Fideo noodles
6 C. Water
3 Tbsp. Tomato paste
2 tsp. Garlic powder
1 tsp. Chicken knorr seasoning
Salt to taste
How Do You Make Sopa de Fideo With Chicken:
Step 1. Heat the olive oil in a large pot over medium high heat.
Step 2. Fry the chicken in the oil with salt to taste until the skin is crispy and it is mostly cooked through. Remove and set aside.
Step 3. Reduce the heat to medium low and add the fideo noodles to the pot in the remaining oil. Toast the noodles until they are golden brown.
Step 4. Pour the water, tomato paste, garlic powder and knorr seasoning into the pot and stir to combine. Cover and simmer for 5 minutes.

Step 5. Return the chicken to the pot, cover and simmer for 15 minutes.
Step 6. Turn the heat off and let sit 10-15 minutes before serving.
