I can’t remember a time when I didn’t love strawberries! They are so sweet, succulent, and flavorful I can’t help but love all things that are strawberry flavored.

This strawberry sheet cake has long since been a family favorite due to how amazing it tastes. You can’t go wrong when making this sheet cake either, it’s practically impossible to mess up.

This strawberry sheet cake is an idea for parties like birthdays, anniversaries, baby showers, bridal showers, and even a brunch here and there. It’s even perfect for a wedding if you want something that is different and not like everyone else.

This irresistible cake makes a lovely gift for neighbors and it’s a great way to welcome a new baby into the family. You’ll find that strawberry sheet cake can easily become a go-to treat for everything.

Can I Use Frozen Strawberries Instead of Fresh? 

Yes, of course, you can use frozen strawberries instead of fresh. It’s completely up to you how you want to make this sheet cake. I prefer using fresh because they seem to be the perfect texture for this strawberry cake. However, frozen strawberries also work lovely.

I recommend letting the frozen strawberries thaw long enough you can cut them into small pieces before folding into the cake. You don’t need to let them thaw all the way or they will become more mushy or slimy and no one wants that.

Can I Make These Fresh Strawberry Cupcakes? 

Yes, if you would prefer to make cupcakes instead of a cake, then, by all means, give it a shot! You can make 24 regular sized cupcakes with this sheet cake batter.

If you decide to turn these into cupcakes, you will need to make sure that you don’t bake them too long. They will cook much faster than the sheet cake would, so shorten your baking time to more like 15-20 minutes and check them.

You’ll know that the cupcakes are done when the tops are a light golden brown color and you can insert a toothpick in the center and it comes out dry. You should also be able to lightly touch the top and it shouldn’t leave an indent where your finger was.

Do I Have to Refrigerate This Fresh Strawberry Cake? 

The cake itself doesn’t’ necessarily need to be refrigerated. But trust me when I tell you that it tastes better when you do keep it chilled.

The frosting on the other hand absolutely needs to be kept in the fridge. So if you are making the cake but not frosting for a while you can leave the cake out until it’s frosted. Then it needs to be refrigerated so it doesn’t spoil.

Ingredients

You don’t need a ton of ingredients to make this strawberry sheet cake, and thankfully most of them you probably already have!

  • Unsalted butter
  • Sugar
  • Eggs
  • Fresh lemon juice
  • Pure vanilla extract
  • Cake flour
  • Strawberry-flavored gelatin
  • Baking soda
  • Kosher salt
  • Buttermilk
  • Diced fresh strawberries

  • Cream cheese
  • Confectioners’ sugar
  • Diced fresh strawberries
  • Heavy cream
  • Fresh lemon juice

How to Make a Strawberry Sheet Cake Recipe

Once you sink your teeth into this sinfully delicious strawberry sheet cake, you will be yearning for the next taste. Here are the easy steps to follow:

First Step: Preheat the oven to 350 degrees F.

Second Step: Cream together the butter and sugar. Use medium speed with an electric mixture. The color should be pale and it will be fluffy, which takes 3-4 minutes.

Third Step: Mix in 1 egg at a time, beat it for a few seconds then add the next egg.

Fourth Step: Add in the vanilla and then the lemon juice.

Fifth Step: Mix together the cake flour, gelatin, baking soda and salt in a separate medium-sized bowl.

Sixth Step: Slowly add the flour mixture in with the creamed butter and sugar mixture. Alternate with buttermilk and finally end with the flour mixture.

Seventh Step: Blend the ingredients slowly on low until they are well incorporated.

Eighth Step: Carefully mix in the diced strawberries.

Ninth Step: Prepare a 9×13-inch baking sheet by greasing it and flouring it then lining with parchment paper.

Tenth Step: Allow the parchment paper to hang over the edges of the pan, then spray it with non-stick cooking spray. Pour in the strawberry sheet cake batter.

Eleventh Step: Make sure the batter is smooth, then bake for 30 – 35 minutes or until you can insert a toothpick and it comes out with nothing stuck to it.

Twelfth Step: Allow the cake to cool in the pan on a wire rack for around 30 minutes.

Thirteenth Step: Take the overhanging parchment paper and use it as handles to slowly lift the strawberry sheet cake from the pan.

Fourteenth Step: Turn the cake onto the wire rack and allow it to finish cooling completely.

Whipped Cream Cheese Frosting Recipe Directions:

First Step: Take the cream cheese and 1/3 cup of confectioner’s sugar and beat until smooth and creamy. Add in the strawberries and mix until blended.

Second Step: Mix together the heavy cream and lemon juice at medium speed until they have become foamy, then increase the speed to medium-high. Add the rest of the confectioner’s sugar and continue beating until stiff peaks begin to form.

Third Step: Fold half of the cream mixture into the cream cheese mixture using a spatula. Then fold in the rest of the cream mixture until incorporated.

Fourth Step: Frost the cooled cake. Cover the tops and sides and dig in!

Ingredients 

  • 1 C unsalted butter, softened
  • 2 C sugar
  • 2 eggs
  • 2 TSP fresh lemon juice
  • 1/2 TSP vanilla extract
  • 2 1/2 C cake flour
  • 3 TBSP strawberry-flavored gelatin
  • 1/2 TSP baking soda
  • 1/4 TSP kosher salt
  • 1 C buttermilk
  • 2/3 C diced fresh strawberries

Whipped Cream Cheese Frosting Recipe Ingredients:

  • 1 package cream cheese, softened
  • 2/3 C confectioners' sugar, divided
  • 3/4 C diced fresh strawberries
  • 1 1/2 C heavy cream
  • 2 TBSP fresh lemon juice

Instructions

  • Preheat oven to 350 degrees.

  • Add eggs, 1 at a time, beating for a few seconds between eggs.
  • Beat in vanilla and lemon juice.
  • In a separate bowl, stir together cake flour, strawberry flavored gelatin, baking soda and salt.
  • Add flour mixture to creamed butter mixture and alternate with buttermilk, ending with flour mixture.
  • Blend on low speed until incorporated.
  • Fold in diced strawberries.
  • Grease and flour a 9x13-inch baking pan and line with parchment paper.
  • Allow a couple of inches of parchment paper to drop over the edges of the pan. Spray parchment with cooking spray and pour batter into prepared pan.
  • Smooth batter evenly.
  • Bake at 350 degrees for 30 to 35 min or until toothpick inserted in center comes out clean.
  • Cool in pan on a wire rack 30 min.
  • Using flaps of parchment paper as handles lift cake from pan.
  • Turn cake over onto wire rack and cool completely.

Whipped Cream Cheese Frosting Recipe Directions:

  • Beat cream cheese and 1/3 cup confectioners' sugar until smooth; add strawberries and beat until just blended.
  • Beat cream and lemon juice at medium speed until foamy; increase speed to medium-high. Slowly add remaining 1/3 c sugar and beat until stiff peaks form.
  • Using a spatula, fold half of cream mixture into cream cheese mixture; fold in remaining cream mixture.
  • Spread cream cheese frosting on top and sides of cake.
