Stuffed Chocolate Peppermint Cookies

Two delicious dark chocolate cookies with luscious peppermint buttercream filling layered in between. These cookies are delicious and super fun to make with children. Can I Use Store Bought Icing Instead?

While this recipe for icing is extremely easy, if you want to save time or reduce this recipe by a few steps, you can use store bought icing. Once you open the icing, you will want to flavor it with peppermint extract and then add the crushed peppermint candies. If the store bought icing is not as thick as you want it, you can add more powdered sugar to it.

Tips for Storing This Chocolate Candy Cane Cookie Recipe

After you have made these cookies, you want to make sure that you are storing them properly. This ensures that the cookies will stay tasting as good on the 3rd day as they do on the first. You want to make sure the cookies are in an airtight container or in a freezer bag. Ideally, you want to protect these cookies from exposure to air. This will make the cookies taste stale.

Also, you want to store these cookies at room temperature. This will keep the cookies in the right texture. Storing the cookies in the refrigerator will make the cookies hard and less appetizing.

Can These Cookies Be Frozen

If you want to freeze these cookies you can freeze them in one of two ways. You can freeze the completed cookies. Wrap each cookie well in plastic wrap and then put them in a freezer bag You can also make the cookie dough and then freeze the dough balls. If you want to be able to take a few cookie dough balls out at a time, you will want to freeze the cookie dough on a plate or a cookie sheet. Then once the cookies are frozen, you can put them in a freezer bag.

Ingredients for Chocolate Sandwich Cookies

  • All purpose flour
  • Unsweetened cocoa powder
  • Salt
  • Sugar
  • Unsalted butter
  • Egg
  • Powdered sugar
  • Peppermint extract
  • Red food coloring
  • Red-and-white-striped candy canes or hard peppermint candies

How to Make Chocolate Peppermint Cookies

In a large bowl, whisk together flour, cocoa, and salt; set aside. In the bowl of a stand mixer fitted with the paddle attachment, beat sugar and butter until well blended, about 3 minutes. Beat in egg. Add dry ingredients mix on low speed until just blended. Shape dough into a disk, wrap in plastic wrap and refrigerate dough 1 hour.

Preheat oven to 350°F. Line 2 baking sheets with parchment paper; set aside. Roll a heaping teaspoon of dough into a smooth ball. Repeat with the remaining dough, spacing the balls about 1 inch apart. Flatten the dough balls with the bottom of the glass. Bake until cookies no longer look wet and small indentation appears when tops of cookies are lightly touched with fingers, about 8 minutes. Cool on baking sheet 3 minutes then transfer to racks and cool completely.

To make the filling, in the bowl of a stand mixer fitted with the paddle attachment, beat powdered sugar and butter until well blended. Add peppermint extract and 2 drops food coloring. Beat until light pink and well blended. Spread or pipe filling evenly over flat side of 1 cookie to edges; top with another cookie, flat side down, pressing gently. Repeat with remaining cookies.

Place crushed candy canes in a small shallow bowl. Roll edges of cookie sandwiches in crushed candy canes.
