Sweet Chili Shrimp Stir Fry

Prep Time: 15 minutes – Cook Time: 25-30 minutes – Servings: 4

Ingredients for Sweet Chili Shrimp Stir Fry:

1 lb. Large shrimp peeled, deveined and tails off

2 Tbsp. Vegetable oil

1 tsp. Ginger paste

1 Tbsp. Minced garlic

½ C. Onion chopped

1 C. Zucchini chopped

1 ½ C. Bell pepper chopped

½ C. Thai sweet chili sauce

2 Tbsp. Soy sauce

½ C. Chopped green onion

Salt and pepper to taste

How To Make This Sweet Chili Shrimp Stir Fry:

Step 1. Heat 1 Tbsp oil in a skillet over medium high heat on the stove.

Step 2. Add the shrimp to the skillet and season with salt and pepper to taste. Saute the shrimp until cooked through and then remove and set aside.

Step 3. Reduce the heat to medium and add the remaining oil to the skillet with the garlic and ginger. Saute for 30 seconds.

Step 4. Mix the onions into the skillet, and saute until becoming tender.

Step 5. Stir in the remaining vegetables and saute for 3-5 more minutes.

Step 6. Place the shrimp bag in the skillet, and pour in the chili sauce as well as the soy sauce. Stir to combine.

Step 7. Saute for several more minutes before serving over rice.
