Slightly spicy, and utterly delicious! That is how I describe this Taco Soup. This recipe is going to give you a soup perfect for any time of the year! It is fantastic, loaded with flavor, and makes a great addition or substitution on Mexican Monday!

This is more like a dump-and-go type of preparation when it comes to making it. This means that you can toss all the ingredients into the Crock Pot and set it and walk away.

Supper is cooking and you can go do all that work that has to be done.

What makes this the best recipe?

This is more like a Chili inspired Soup. It is thick and chunky and tastes wonderful. The Taco Soup is seasoned perfectly, it is not too spicy, yet it holds all the flavors you would want to find.

Variations

You can add jalapenos to give it more of a spicy kick. You could cut the amount of spice you use in half so that it is not that spicy.

Ingredients:

  • Ground beef
  • Onion
  • Pinto Beans
  • Kidney Beans
  • Corn
  • Ro-Tel
  • Diced Tomatoes.
  • Taco Seasoning Mix
  • Ranch Dressing Mix.
  • Water

How to make Taco Soup:

Step 1: Brown your meat. Keep in mind, you can use ground beef or ground turkey. Whatever you prefer! You can also add in all the flavor while you are browning your meat. If you want to add any other spices or onions, now is the time as it simmers in and cooks with your meat.

Step 2: Grab your canned goods! Open up all of the cans and dump everything into your crockpot. Isn’t it so easy? Just dump em’. Your kidney beans, pinto beans, corn, etc. Throw it all in, juice and all.

Step 3: Once you’ve emptied all of your cans into the crockpot you will want to let it sit on high for an hour or two.

Then turn it down to low and let it simmer. Ah, your house will smell amazing! Everyone will be asking when is it time to eat and counting down because you will officially have the best darn crockpot taco soup you’ve ever eaten!

Added extras: Don’t forget to top with sour cream, shredded cheese, and chives, if you like them. It’s the perfect touch and added topping to a favorite meal.

  • 1 Large Onion, Chopped
  • 1 Can Pinto Beans
  • 1 Can Kidney Beans
  • 1 Can of Corn
  • 1 Can Ro-Tel
  • 1 Can Diced Tomatoes.
  • 1 Packet Taco Seasoning Mix
  • 1 Pack Ranch Dressing Mix.
  • 1 1/2 Cups Water
