Winter White Bean and Italian Sausage Soup

This is the perfect soup for those chilly days that come around. You know the ones when Mother Nature can’t decide if she will let Spring happen or leave Winter for a few more days.
This soup is also perfect for those Fall days before Winter hits. Of course, since I love Soup, I enjoy making this Pot of Soup year-round.

My family loves all the flavors combined in this soup. I like it because it can be a versatile soup. This means that I could switch up a couple of items in the soup and make it seem like a whole different soup.
I enjoy meals that I can use for a couple of days. This is one of those recipes.

What makes this recipe so perfect?
This soup is hearty, filling, and tastes great! The soup is easy to make and my family loves it, just like yours will. The soup has great flavor combinations to it and besides, a pot of soup simmering makes the house smell wonderful!
Could I make this the Crockpot?
That is a wonderful idea. Get all your ingredients ready and toss them in when it is time. You set the Crockpot to temperature and let it cook while you are at work.
Can I use Ground Italian Sausage?
The recipe does call for Ground Italian Sausage, however, I know many people who use Sausage Links to make this soup. The Links are the same flavor, yet seem to give it a different taste.
Ingredients:
- Cannelloni beans rinsed and drained
- Diced tomatoes
- Ground Italian sausage
- Minced garlic
- Frozen chopped spinach cooked and drained of extra liquid
- Basil
- Chicken broth
How to make Winter White Bean and Italian Sausage Soup:
Step 1. Cook the Italian sausage in a skillet over medium-high heat until completely browned.
Step 2. Add the minced garlic to the skillet with the meat and saute for an additional 30 seconds. Drain any excess fat.
Step 3. In a pot over medium-high heat on the stove, bring the chicken broth and can of beans to a boil.
Step 4. Reduce the heat to a simmer, then add spinach and basil.
Then, add sausage and diced tomatoes.
Step 5. Continue to simmer for 10-15 minutes before serving.

Instructions

- Reduce the heat to a simmer and add in the spinach, basil, sausage and diced tomatoes.
- Continue to simmer for 10-15 minutes before serving.
