I suppose you could also say that it is a healthier version of Egg Rolls since it is not deep-fried in oils. You still get your choice of meat, such as pork, along with cabbage and shredded carrots.

Contrary to the name, there are no eggs in an Egg Roll Stir Fry. The eggs would come in when the Egg Roll Wrapper is made.
Ingredients:
- Ground beef
- Soy sauce
- Chopped onion
- Shredded cabbage coleslaw mix
- Shredded carrots
- Minced garlic
- Ginger paste
- Sesame oil
- Green onions for garnish

How to make Egg Roll Stir Fry:
Step 1. Add one tablespoon of sesame oil to a skillet over medium-high heat on the stove.
Step 2. Add the ground beef and onion to the skillet and saute until the meat is completely browned and the onion has softened.
Step 3. When the meat is halfway browned, mix the shredded carrots into the skillet.
Step 4. Toss the cabbage into the skillet, and cook until it begins to soften.
Step 5. In a bowl, combine the soy sauce.
Step 6. Add ginger paste and another tablespoon of sesame oil.
Step 7. Add minced garlic
Step 8. Mix to combine.
Step 9. Pour the sauce mixture over the ingredients in the skillet, and stir to combine.
Step 10. Continue to cook for another 3-5 minutes before serving topped with freshly chopped green onions.

Instructions
- Add one tablespoon of sesame oil to a skillet over medium-high heat on the stove.
- Add the ground beef and onion to the skillet and saute until the meat is completely browned and the onion has softened.
- When the meat is halfway browned, mix the shredded carrots into the skillet.
- Toss the cabbage into the skillet, and cook until it begins to soften.
- In a bowl, combine the soy sauce, minced garlic, ginger paste and other tablespoon of sesame oil. Mix to combine.
- Pour the sauce mixture over the ingredients in the skillet, and stir to combine. Continue to cook for another 3-5 minutes before serving topped with freshly chopped green onions.

How should I store the leftovers if I have any?
The Egg Roll Stir Fry should be cooled to room temperature. You can then place it in an airtight container and into the refrigerator for up to 4 days.

I made this using skinless chicken breast cut into smallish pieces. Served with rice. It was really tasty! I didn’t have any green onions to top it off and I think next time I will make sure I have them because they would lend a nice freshness to the dish.
Soy sauce and sesame oil were very heavy. Definitely do like an 8th of what the recipe recommends.
