Can I add mushrooms to pepper steak?
Of course! Mushrooms are an excellent addition and will taste great with the other ingredients.
Can I use beef broth instead of bouillon?
Yes, beef broth is essentially a watered-down version of bouillon. So you can swap broth for the bouillon cube and the hot water in this recipe.

Crockpot Pepper Steak Tips
Here are a few tips to make sure your Crockpot Pepper Steak turns out perfect every time:
- Use good quality beef. I like to use chuck roast for this recipe because it is nice and tender. However, you can use any type of beef that you like. Just make sure it is good quality so that it doesn’t get tough when cooked in the crockpot.
- Cut the vegetables into uniform pieces. This will help them cook evenly and prevent them from getting mushy.
- Don’t overdo it on the seasoning. The beef and vegetables will release their own juices as they cook, so you don’t need to add a lot of extra seasoning. Just a little salt, pepper, and garlic powder will do.
- Let the Crockpot Pepper Steak cook until the beef is nice and tender. This usually takes about 8 hours on low or 4 hours on high. However, every crockpot is different so just keep an eye on it and let it cook until the beef is cooked to your liking.
- Serve Crockpot Pepper Steak over rice or noodles for a complete meal. You can also serve it with a side of steamed vegetables or a salad.
- This Crockpot Pepper Steak recipe reheats well, so feel free to make a batch and enjoy it throughout the week!
Crockpot Pepper Steak Variations
- Use different types of peppers. I like to use a mix of green, red, and yellow peppers, but you can use any type of pepper that you like.
- Add some spice with a tablespoon or two of diced jalapeños.
- Swap out the beef for chicken or pork.
- Make it a complete meal by adding some chopped carrots or potatoes to the crockpot.
- Serve Crockpot Pepper Steak over rice, noodles, or steamed vegetables.
How to Thicken Pepper Steak Sauce:
If you would like the sauce to be a little thicker, before serving, combine 2 tablespoons of cornstarch with 2 tablespoons of cold water. Mix together well, then pour into the crockpot.
Stir it until well mixed, and it will thicken. You can repeat this process until it reaches the desired texture and flavor. You don’t want to go overboard, or it will make it taste blander.
How To Serve Crockpot Pepper Steak:
It tastes excellent on its own, but it also goes wonderfully on a bed of white rice! You could also serve it with mashed potatoes, cauliflower rice, a salad, or some warm bread.
How to store Crockpot Pepper Steak:
Once it’s cooled, put it in the fridge in an airtight container. It will last 3–4 days.
How to Freeze Crock Pot Pepper Steak
Store in a freezer-safe container, and it will last in the freezer for 1-2 months. Thaw in the fridge overnight before reheating.
How to Reheat Crock Pot Pepper Steak
Heat the pepper steak in a pan over medium-high heat. Stir frequently until it’s hot, and then serve. You can also microwave it, but I recommend covering it with a paper towel first because it will splatter as it heats.
Can I make pepper steak as a freezer meal (before cooking)?
Yep! Put all of the ingredients into a freezer bag or another freezer container. Then freeze for up to 3 months. It’s best to thaw it in the fridge overnight; then you can pour it into the slow cooker. It’s super easy and great for meal prepping.

Thanks for you comment Johanne, I’m sure you will like it.
This looks delicious and I am anxious to make it, but only give 3 stars instead of 5 because there are 2 issues. First, ingredient list includes one can of diced tomatoes but does not say what size can.
Second, step 5 of the instructions says: Add the soy sauce, BROWN SUGAR, worcestershire and BROWN SUGAR to the crockpot. ????
