Fried rice is such a versatile dish. It’s a nifty way of using up leftover cooked rice and you can add any proteins, vegetables and seasonings to it. In this recipe, we are using juicy shrimp which are always great in such a dish.
If you don’t have leftover rice from yesterday or the day before, you can cook it fresh. But don’t use it like that. Instead, let it cool down for an hour or two first (or even pop it in the freezer to speed the process up).

Storage Instructions:
Leftovers will keep for a couple of days in the fridge but make sure you warm them back up gently. You don’t want the shrimp to overcook because they’ll get chewy.
Variations and Substitutions:
If you want to swap out any of the ingredients, you absolutely can. Try chicken, pork or another meat in place of the chicken, or swap half the garlic for minced ginger. You can also use any kind of vegetables you like, although peas and carrots are especially popular in restaurant versions of the dish.
