3 cups fresh blueberries

3 tablespoons white sugar

1/3 cup orange juice

2/3 cup all-purpose flour

1 pinch salt

1 egg

Fresh blueberries: Fresh are better than frozen here as the water in frozen berries will overwhelm the cobbler and make it soggy. You can use regular blueberries or wild blueberries, if you can find those fresh where you are. You could also have some fun and use the newer pink varieties of blueberries if you happen to have some of those in your garden.

Orange juice: A little orange juice adds a nice, citrusy, bright edge to the flavor of the blueberries. The added liquid also helps the berries form the syrupy filling.

Butter: Go for unsalted here. If you have salted butter only, and it isn’t very salty, then you could possibly substitute that instead. But very salty butter is a no-go. That will make the pastry crust way too salty-tasting.

Baking powder and egg: Egg helps bind the pastry together and also provides some rising power to help out the baking powder. That baking powder, however, does most of the leavening work.

How to Make It

Step 1: Preheat the oven to 375 degrees F/190 degrees C.

Step 2: In a baking dish, mix the blueberries with the 3 tablespoons of sugar and the orange juice and set them aside. You could use a separate bowl, of course, if you’re willing to have an extra dish to wash.

Step 3: In a smaller bowl, mix the flour and baking powder together with the salt. Sift them, don’t just mix them with a spoon.
