I love pot roast. It reminds me of Sunday dinner with the whole family. These days, it can be hard to make pot roast for dinner because we are often busy. When I think of it, I will make pot roast in the slow cooker, but I don’t always remember to start it first thing in the morning. That is where the Instant Pot comes in.
I have been slightly obsessed with my Instant Pot since I got it. I have used it to make just about everything. I am always impressed with the flavor it gives and the ease of using it. This pot roast is no exception. Juicy and tender, this Instant Pot Pot Roast is the best way to make pot roast ever.

Whenever I think about having this easy pot roast recipe, I always think of serving it with potatoes and carrots. I love cooking them with the pot roast so that the flavors all combine. It makes my mouth water just thinking about it. - Bottom round roast- Most commonly used for roast beef, this is another excellent choice when it comes to making pot roast.
How to Store Easy Pot Roast Recipe
I love making pot roast because I always have leftovers the next day or for a few days and that is alright by me. Pot roast is one of those meals that just gets better the longer it sits. I like to store my pot roast, vegetables and broth all together in the same pot when I store this easy pot roast recipe.
It is important to store the pot roast in an air tight container. If you are using the Instant Pot cooking insert, you will want to wrap it tightly with plastic wrap. Or you can store this meal in a classic airtight container.
How Long Does this Instant Pot Pot Roast Recipe Last
When you make this Instant Pot Pot Roast recipe, you will most likely have leftovers. If you do, you can store it in the refrigerator. When it is stored properly, this pot roast will last for several day, up to 4 days. In my house, this never lasts that long, but that is because we love to reheat it for dinner and lunches, including pot roast sandwiches. So Good!
Can I Freeze Instant Pot Roast
You can absolutely freeze Instant Pot roast. You can make the roast and eat it the next day. If you still have leftovers, you can take them and put it in a freezer bag to eat for another time. I like to store the veggies and broth with it as well. However, potatoes do not always freeze well. They can come out grainy and they simply do not hold up well in the freezer. Some people do not mind the change, but if you do, be sure to eat the potatoes before freezing the rest of the meal.

- Beef chuck roast
- Olive oil
- Salt and pepper
- Onion
- Carrots
- Tomato paste
- Garlic
- Beef broth
- Worcestershire sauce
- Thyme
- Whole baby potatoes
- Cornstarch
How to Make Best Ever Instant Pot Pot Roast Recipe:
Set the Instant Pot to the saute function, and add in the olive oil.
Cut the chuck roast in half, and season it well with salt and pepper to taste on each side.
Place the beef into the heated Instant Pot, and sear for 4 minutes on each side.
Remove the beef from the Instant Pot, and add in the onion. Saute the onion until it begins to soften, and then turn the Instant Pot off.
Add the garlic to the Instant Pot, and then mix in the Worcestershire sauce, broth and tomato paste. Stir to combine well.
Return the beef to the Instant Pot, and place the sprigs of fresh thyme in with it.
Close the lid on the Instant Pot, and make sure that the release valve is set to sealing.
Set the Instant Pot to cook on manual for 60 minutes. Allow the Instant Pot to do a slow release for 10 minutes after the cook time has ended, and then move the release valve to the venting position to relieve any additional pressure.
Remove the lid, and place the potatoes and carrots on top of the beef. Close the lid again, making sure the release valve is set back to sealing, and set the Instant Pot to manual for 10 minutes. Again, allow the Instant Pot to naturally release for 10 minutes after the cook time is up before releasing the additional pressure by moving the release valve to the venting position.
Take the lid off of the Instant Pot again, and remove the thyme sprigs and beef. Discard the thyme sprigs, and shred the beef before returning it to the pot.
If you wish to thicken the liquid in the pot roast, mix the cornstarch with a small amount of water, and pour it into the pot. Stir to combine, and allow it to thicken.
