Why I love Chipotle Chili Slaw?

  • I love spicy food, and chipotle slaw feeds that love literally, complementing everything from jalapeño burgers to fish tacos.
  • I can make this recipe days ahead of time, store it in the fridge, then count on it to taste great when served.
  • Leftovers keep fabulously in the refrigerator for a few days – not that this creamy, spicy treat lasts that long.

What is this coleslaw sauce made of?

The key ingredients for this chipotle slaw recipe include red and white cabbage, carrots, chipotle chili pepper, and onion. The spices for it range from garlic to cilantro. Its creamy nature comes from a base of mayonnaise, buttermilk, and sour cream.

Is coleslaw better with or without mayonnaise?

Cole slaw recipes either use a vinegar base or a mayonnaise base. Which one tastes better depends on your personal tastes. Like wines, some cole slaws go better with certain dishes, so pair a vinegar-based chipotle chili slaw with game meats like venison or bison. Creamy cole slaws work better with processed meats like chicken breasts or ground beef.

How to serve Chipotle Chili Slaw?

Chipotle chili slaw makes a delicious side dish to serve with steak, chicken, hamburgers, or hot dogs. Plate it alongside hand-cut French fries or potato salad.

Chipotle Chili Slaw Cooking Tips:

Start with fresh vegetables and spices. Wash the cabbage thoroughly and soak the cabbage in salted water for at least four hours. Shred your ingredients using a grater or food processor. Strive for homogeneity in the size of the shreds.

If you need to make this chipotle slaw recipe ahead of your event, keep the dressing and vegetables separate and refrigerated. Mix them together about two hours before serving the cole slaw. This helps your cabbage remain crunchy.

Variations:

Make this chipotle chili slaw spicy by adding a jalapeño or two and four small shallots. Take a cue from Chef Bobby Flay, and use green cabbage instead and add two tablespoons of honey and fresh lime juice to make a smokey version. Cole slaw offers the chef opportunities to make it their own by adding a favorite ingredient.

Ingredients:

  • Red cabbage
  • White cabbage
  • Shredded carrots
  • Buttermilk
  • Sour cream
  • Mayonnaise
  • Cilantro
  • Chipotle chili pepper in adobo sauce
  • Garlic powder
  • Onion powder
  • Paprika
  • Salt and pepper, to taste

How to make Chipotle Chili Slaw:

Step 1: Add buttermilk, sour cream, mayonnaise, cilantro, chili pepper, garlic powder, onion powder, paprika, salt, and pepper to a blender and blend well.
