I love a good casserole. This broccoli rice chicken and cheese casserole is one of my favorites.
There’s something about the combination of creamy, cheesy goodness with a crispy topping that just makes my taste buds happy.

This is a healthier version of a classic chicken and broccoli casserole recipe. Filled with healthy chicken, low fat cheese and broccoli, this dish is sure to please the flocks.
It is perfect for any weeknight dinner or party. The kids love all the cheese with the chicken, so it is a win to get them eating more vegetables.

I do not have Cream of Chicken Soup, what can I do?
This is not a problem. You can use Cream of Mushroom, Velveeta or even mayonnaise as a substitute. There will be a difference in flavor, keep that in mind.
Can I use Raw Chicken in the casserole?
If you happen to be in a rush, using raw chicken is a way to get it done quickly. It will be even more important to be sure that the chicken is thoroughly cooked before serving. You could also use leftover chicken from a previous meal.
Can I use uncooked rice in the casserole?
With a few minor adjustments, you can definitely use uncooked rice. You will need to remember to use more uncooked rice than you do cooked rice. You will likely need to have more liquid in the casserole, as the rice will soak up much more. You will also need to cook the casserole for a longer period of time.
Can I use instant rice in this casserole?
Thankfully, yes, it is possible to use instant rice in this casserole. You will not need to add the rice to the casserole until the last bit of cooking time. The instant rice does not take as long to cook.
Can I use Rotisserie Chicken?
Stopping to pick up some already cooked Rotisseries Chicken saves plenty of time. If you have it on hand or stop at the store, certainly you can use it. Just try to be sure the chicken is in bite sized pieces.
Can I use Brown Rice?
Using brown rice in this casserole will actually make it even healthier than it is. However, using brown rice you will need to cook it ahead of time. Brown rice takes a bit longer to cook. The same goes if you decide to use Wild Rice. That also needs to be cooked ahead of time.
Can I use frozen broccoli?
I prefer to use fresh, but when I am low on time, yes, I will take a shortcut and use the frozen broccoli. The broccoli does need to be thawed before using it however. This can be done by running cold water over it until it is thawed.
Ingredients:
- Shredded chicken
- Instant Rice
- Chicken broth
- Cream of onion soup
- Cream of chicken soup
- Butter unsalted
- Velveeta cheese food
- Heavy whipping cream
- Milk
- Frozen broccoli
- Panko bread crumbs (optional)

How to make Broccoli, Rice, Chicken and Cheese Casserole:
Step 1. Preheat the oven to 350 degrees.
Step 2. Cook the broccoli as directed in the microwave and drain.
Step 3. Place the 2 cups of chicken broth in a saucepan on the stove over high heat and bring to a boil.
Step 4. Add the rice to the boiling chicken broth, remove from the heat, cover and let sit for 5 minutes.
Step 5. Stir the butter and velveeta into the cooked rice in the saucepan.
Step 6. In a large mixing bowl, combine the shredded chicken and cooked broccoli.
Step 7. Add the cheesy rice mixture to the mixing bowl.
Step 8. Place the two cans of soup, milk, and heavy whipping cream into the mixing bowl. Stir everything together completely.
Step 9. Layer the mixture into a well-greased 9×13 baking dish.
Step 10. Top with panko bread crumbs if desired.
Step 11. Bake for 25-30 minutes until browned and bubbling.

Instructions

What size baking dish should I use?
This will depend on the amount of casserole you are making. For a small casserole, an 8×8 dish is good. For a large casserole a 9×13 baking dish works. An extra large casserole should be made in a 12×18 dish. This would be enough to feed a crowd.
How do I store this casserole?
When the casserole has cooled completely to room temperature, it can be covered and placed in the refrigerator for up to 4 days. It can also be placed in the freezer for up to 6 months.
How do I reheat this casserole?
Place the casserole on a baking tray and in an oven heated to 350*. Bake until the cheese is hot and bubbly again. This can also be reheated in the microwave to desired temperature.
Can I make this Chicken Rice and Broccoli Casserole ahead of time?
Yes it can be prepared ahead of time but do not bake it. It will need to be covered and placed into the refrigerator for up to 12 hours.
