What’s Cajun Seasoning?
Cajun seasoning is a spice blend that typically includes paprika, cayenne pepper, garlic powder, onion powder, and other herbs and spices. It’s commonly used in Cajun and Creole cuisine to add flavor and heat to dishes.
What is the Difference Between Cajun and Creole Seasoning?
While both Cajun and Creole seasoning blends are used in Louisiana cuisine, they have some differences. Cajun seasoning tends to be spicier, with a focus on cayenne pepper, while Creole seasoning is milder and has more of a focus on herbs like thyme and oregano.
Why Cook Pasta Separately?
Cooking the pasta separately allows you to control the texture and doneness of the pasta. It also prevents the pasta from absorbing too much of the sauce, which can make it mushy and less flavorful.
What Type of Shrimp to Buy
For this recipe, it’s best to use large or jumbo shrimp that are peeled and deveined. Fresh or frozen shrimp can be used, but if using frozen, make sure to properly defrost them before cooking.
How to Know When Shrimp is Done Cooking?
Shrimp is cooked when it turns pink and curls into a “C” shape. It’s important not to overcook shrimp, as it can become rubbery and tough.
Sausage Substitutions
Andouille sausage can be substituted with any spicy sausage, such as chorizo or hot Italian sausage. For a milder flavor, use a sweet or mild Italian sausage.

What’s the Easiest Way to Peel and Devein Shrimp?
To peel and devein shrimp, follow these simple steps:
- Hold the shrimp by its body and grasp the head with your other hand.
- Twist the head off the shrimp and discard it.
- Use your fingers to remove the shell from the shrimp. Start at the head end and work your way towards the tail.
- Use a small knife or a shrimp deveiner to make a shallow cut along the back of the shrimp.
- Gently remove the black vein with the tip of your knife or the shrimp deveiner.
- Rinse the shrimp under cold running water to remove any remaining shell or vein.
And that’s it! Your shrimp is now peeled and deveined, and ready to be cooked.
Should I Cook Shrimp with Tail On or Off?
It’s a matter of personal preference. Leaving the tail on can make for a more visually appealing dish, but removing it can make it easier to eat.
