Fried potatoes and onion are a regular side dish in my family.
The crispy golden skin and the melt-in-the-mouth center of potato chunks make us want to savor every bite. And together with equally crisp onions, there’s a harmony of flavors in every forkful.

Honestly, we can have this side dish with just about anything. From omelets to grilled burgers, it’s OMG-that’s-so-good level good.

Why Do I Love Fried Onions and Potatoes?
The recipe is as quick as it gets. Just peel, chop, and fry. And you’re done! It means if you have a few smashing the table with spoons and chanting ‘I’m Hungry’ kinda people on the other side, you can still jump in and save the day.
And, of course, there are only two veggies, some herbs, and a few tablespoons of oil involved. No reason to fret about being out of ingredients.
Which Potatoes are the Best for Frying?
I’ll always pick russet potatoes. They make the crunchiest French fries, so it makes them the best choice. But make sure you cook them well. These potatoes have a high starch content. If they’re uncooked, they’ll be soggy.
How to Avoid Soggy Potatoes and Onions?
Sogginess can pull the fun and excitement out of fried potatoes and onion. But I know exactly how to dodge the undesirable texture:
- Use Oil with a High Smoke Point – The higher the smoke point, the less chance of oil getting absorbed into the potatoes and onions. And in my experience, peanut oil has done a great job.
- Fry in Batches – Don’t overcrowd the pan, or else you’ll end up with soggy fried potatoes and onions. It might take longer, but it’s worth the wait.
- Only Add Veggies in Hot Oil – Don’t rush it. Let the oil get hot first before adding the sliced potatoes and onions.

- Onion chopped into large pieces
- Peanut oil
- Butter
- Salt and pepper to taste
- Paprika and basil for garnish

How to make Fried Potatoes and Onions:
Step 1. Heat a layer of peanut oil and the butter in a skillet over medium-high heat.
Step 2. Add the chopped potatoes and onion to the heated skillet, and saute until the potatoes and onions are browned and crispy. Stir often to avoid burning parts of them.
Step 3. Add salt and pepper to taste, drain and excess oil and garnish with paprika and basil prior to serving.
Serve warm!

You might want to make the recipe a tad bit different to keep it interesting.

You can microwave for a quick fix. But for the best result, use a heavy-bottomed pan or skillet and reheat over medium heat. It will give them that crispy yumminess back!
Should I Boil the Potatoes Before Frying them?
No, nopedy, nope! It’s totally unnecessary! Just follow the recipe steps as is.
Should I Soak Raw Potatoes in Water Before Frying?
Well, if you want crispier potatoes, soak them before frying. It’ll take away the extra starch and keep the potatoes from turning black.
