  • Butter unsalted
  • Onion diced
  • Celery chopped
  • All-purpose flour
  • Milk
  • Chicken broth
  • Cooked and chopped broccoli florets
  • Matchstick carrots
  • Shredded sharp cheddar cheese
  • Salt and pepper to taste

How to make Panera Broccoli Cheddar Soup:

Step 1. Melt 1 tbsp butter in a saucepan over medium heat on the stove. Add 1 cup of onion diced and ⅓ cup of Celery chopped and saute until beginning to soften. Remove and set aside.

Step 2. Add ¼ cup of butter and ¼ cup of flour to the saucepan and stir to combine. Continue stirring and cook for 3 minutes.

Step 3. Whisk in 2 cups of milk.

Step 4. Then, add 2 cups of chicken broth, and salt and pepper to taste.

Step 5. Simmer covered for 15 minutes.

Step 6. Add onions and celery back to the saucepan.

Step 7. Then, add 2 cups of cooked and chopped broccoli florets.

Step 8. Add 1 cup of Matchstick carrots.

Step 9. Simmer covered another 15 minutes.

Step 10. Add in 2 cups of shredded sharp cheddar cheese.

Step 11. Stir together until it is completely melted and serve.
