Ingredients:

  • Shrimp
  • Fettuccine noodles
  • Butter
  • Roasted red peppers
  • Heavy whipping cream
  • Minced garlic
  • Parmesan cheese grated
  • Paprika
  • Salt and pepper to taste

Ingredient Notes and Substitutions

If you’re looking for a lighter pasta dish, consider swapping the butter for olive or avocado oil. This significantly reduces the calories.

You can also swap the heavy whipping cream for milk, though your pasta may not turn out as thick as originally intended.

If you don’t have any roasted peppers on-hand, you can still make this simple shrimp fettuccine with roasted red pepper sauce meal using red pepper flakes. For even more spice, consider adding a bit of cayenne pepper. If you love Louisiana-style pasts or Cajun shrimp and steak Alfredo, you can add a dash of Cajun or Creole seasoning to your heavy whipping cream mixture to taste.

If you don’t have any freshly grated Parmesan on-hand, you can also use Parmesan in a jar. Either way, it will work out fine. Adding plenty of cheese onto this pasta once it’s done cooking will elevate the flavor profile even more!

How to Make It

Step 1: Boil water for your noodles. Place the fettuccine into boiling water, and cook until done to your liking. Fettuccine typically requires 8 to 12 minutes for al dente’ pasta. Drain and set aside.

Step 2: Add the roasted red peppers to a food processor or blender and puree until well-blended. This will make for a perfect blend once you’re ready to add the red pepper sauce into your heavy whipping cream mixture.

Step 3: Melt the butter in a skillet over medium-high heat. Avoid burning your butter at high temperatures, as this can drastically impact the flavor of your pasta.

Step 4: Season your shrimp with paprika, salt, and pepper. Sauté the shrimp in the skillet of melted butter until cooked through. Raw shrimp typically cooks through in 2 to 3 minutes on each side. Once the shrimp is done cooking, remove it and set it aside.

Add the Paprika.

Sauté the Shrimp

Step 5: Reduce the heat of your pain to medium and add the garlic to the same skillet. Sauté for 30 seconds, or until the garlic is fragrant, but not burnt.

Step 6: Whisk in the puréed red peppers and simmer for 5 minutes.

Step 7: Stir in the heavy whipping cream and cook until the sauce thickens.

Step 8: Mix in the Parmesan cheese.

Step 9: Add the shrimp and noodles to the skillet, and toss to combine with the sauce.

Tips for Success

Use small or medium-sized shrimp that are peeled and deveined. You can often find peeled, deveined, and tail-off raw shrimp at most grocery stores and supermarkets.

Allow this pasta to cool completely before separating it into Tupperware or airtight containers for storing and reheating purposes.

Storage & Reheating

This simple shrimp fettuccine with roasted red pepper sauce meal is simple to store and reheat. Store your leftover pasta in airtight containers designed for refrigeration and/or freezing. If you choose to store your shrimp fettuccine in the refrigerator, you can do so for up to 3 to 4 days.

To freeze your pasta, do so in separate servings using Tupperware or other strong airtight containers. You can store this healthy shrimp fettuccine with roasted red pepper sauce version for up to 3 months in the freezer.

To reheat, remove your pasta from the fridge or freezer (and thaw). Place your pasta in a microwave-safe bowl and reheat for 2 to 3 minutes per serving. You can also reheat this pasta on the stove over medium heat for approximately 10 to 15 minutes.

Serving Suggestions

One suggestion I have for this recipe is to add vegetables such as peas or additional bell peppers. This is a great dish to make and use for meal preparation.

If you’re searching for more serving suggestions and homemade shrimp fettuccine with roasted red pepper sauce ideas, consider a deliciously crunchy salad, such as Dad’s creamy cucumber salad, to cool the spice!

Notes

Use raw shrimp instead of cooked cold shrimp for tender pasta. Cooking shrimp that has already been cooked thoroughly may cause it to harden with a rubbery taste.
