Why You’ll Love This Recipe
- Freezer-friendly.
- Simple pantry and freezer staples.
- Easy to make substitutions for various ingredients.
- A favorite of even the pickiest eaters.
- Feels like Sunday dinner, but easy enough for a busy evening after work and school.

Ingredient Notes & Substitutions
- Ground beef: We love this quick hamburger steaks with onion gravy recipe with 80/20 ground chuck. But it’s easy to substitute the ground beef with ground turkey or a very lean hamburger meat.
- Worcestershire sauce: This truly is the secret to our healthy hamburger steaks with onion gravy version. If you don’t have it in the fridge, it can be tempted to skip it. But trust me on this: Go to the store and buy a jar. It will last forever.
- Onion: This hamburger steak recipe is better when it’s made with fresh onions, preferably sweeet Vidalia. But you can easily substitute frozen onions if you had a bumper crop from the garden that you froze up.
- Beef broth: If you don’t have beef broth on hand, you can use bouillon to make some. Just be sure to follow the recipe on the container for mixing up the broth. Also, sodium-free beef broth doesn’t change the flavor of these yummy hamburger steaks one bit.
- Flour: The flour thickens your gravy. But a cornstarch slurry will do the same thing if you need a gluten-free option. Mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir well.

How to Make Hamburger Steaks with Onion Gravy:
Step 1. In a mixing bowl, combine the ground beef, bread crumbs, and eggs. Don’t overwork your ground beef mixture. Work it gently, just until all the ingredients are combined. This way, you’ll be sure your hamburger steaks are nice and tender.

Step 2. Then, add onion powder and garlic powder. Again, stir it in just until it’s incororated to avoid overworking the beef.

Step 3. Then, add the parsley flakes.

Step 4. Then, add the Worcestershire sauce and salt and pepper to taste.

Step 5. Mix with your hands to combine thoroughly. Keep going easy with this (sorry to keep saying it, but I know you don’t want tough patties!)
Step 6. Form the meat mixture into 8 even-sized patties.
Step 7. Heat a skillet over medium-high heat on the stove, and cook the patties until done to your liking. Pan-sear them tgo a delicious crust. Those little brown bits add tons of flavor to this dish. Remove and keep warm.

Step 8. In a skillet over medium heat, add 1 tablespoon of olive oil.
Step 9. Add the onions to the heated skillet and cook until softened. Cook them slowly, just until they’re soft and caramelized, not burnt. This gives you the foundation for your gravy.

Step 10. Stir the flour in with the onions and saute for another 30 seconds.

Step 11. Whisk the beef broth in with the onions and continue to simmer until the mixture has thickened into a gravy.
Step 12. Return the meat to the skillet and cover it with the gravy. Simmer for another 5-10 minutes before serving.

Tips for Success
These simple tips will give you the best results:
- When you add the flour to your onions in the pan, let it cook for just a minute before adding the beef broth. This will toast the flour and get rid of any pasty residue.Storage & Reheating
- Saying it one more time: Don’t overwork your ground beef mixture. Let’s serve up some tender hamburger steaks!
- Be sure to cook your onions slowly, and keep an eye on them.
- Get a good sear on your patties. It makes all the difference in the flavor.
Storage & Reheating
If you have leftovers, put them into an airtight container as soon as you’re done eating and stick them in the fridge. They’ll be delicious for up to three days. (They might taste even better the next day!)
To reheat them, you can use the microwave. But if you have time, consider putting the steaks and gravy in a pan on your stovetop. Warm them up over low heat until they’re heated all the way through.
Freezer-friendly? You betcha! You can freeze them in a freezer container, gravy and all. Another idea is to freeze individual patties. They’re great for pulling out for a quick meal or to carry for lunch at work.
Serving Suggestions
Need some homemade hamburger steaks with onion gravy ideas for sides? You know homemade roasted garlic mashed potatoes are always going to hit the sweet spot with this meal. They’re perfect for soaking up that savory gravy.
We also love buttered egg noodles. They were a favorite when I was growing up because boiling some noodles was much easier for my grandmother (and later, my mom) than peeling, boiling, and creaming potatoes.
For a veggie, you can’t go wrong with green beans. Steamed if you’re trying to offset some of the calories from the rest of the meal, or sauteed in butter.
Finish it off with crusty bread, garlic Texas toast, rolls, or even homemade buttermilk biscuits with cornmeal to mop up the gravy.

Notes
I can’t remember a time this recipe wasn’t in my life. Family lore is that my grandmother got it off the back of an onion soup mix box. That checks because she used that instead of the onion and garlic powder.
I’ve tweaked it a lot over the years, and I really do think this recipe is not a change, but a transformation of a classic. Simply put, it just works. Enjoy!
