The Best Vanilla Crazy Cake

Odds are,  your grandparents made and ate some pretty incredible desserts during the depression era. During that time, there wasn’t much money, and people had to do some major improvising when it comes to desserts.

People of those days were downright brilliant in the kitchen, and they were so inspirational. I am thrilled that I was able to create and bake a top-notch cake without eggs without any issues! This vanilla crazy cake is a breeze to make, and you barely need any ingredients.

You don’t have to make a cake with TONS of ingredients and fancy frostings to be impressive. This vanilla crazy cake proves that. It’s truly crazy how you can make such an awesome cake without the typical ingredients like eggs, milk, and butter.

Whip up a vanilla depression cake for potlucks, or take it to a new neighbor to welcome them to your neighborhood. You can also serve it for a fancy dinner party, and no one is going to realize how simple and cheap this cake was to make. But you will save a lot of energy and time too.

Next time, you are in the mood for something “extra” special, you should, for sure, make one of these depression cakes. I am confident you will enjoy every last bite of it.

What Does This Cake Taste Like

Surprisingly, this depression-era cake tastes similar to a regular vanilla cake. It doesn’t have a ton of differences, but you will notice it’s slightly unique compared to what you are accustomed to eating. The vanilla flavor is drool-worthy and hard to resist a second piece. Don’t’ worry; I won’t tell anyone if you eat a second slice. 😉

The cake has a fluffy, spongy texture that is pretty incredible. Imagine biting into something that is sweet, delicious, and fluffy. That is what you get when you make a crazy vanilla cake. You’ll have to try it to fully understand what you get with each taste.

Storing Depression Cake

Due to the homemade cream cheese frosting, it’s best to store the depression cake in the fridge. It should be airtight and kept chilled for best results. The depression cake will last up to 5 days in the fridge. It’s a great cake for meal prepping when you want to have some dessert around on hand. Or if you are hosting an event being able to make it in advance will save you some time later too.

Can you freeze the leftover cake?

Yes, you can freeze the leftover vanilla crazy cake. Wrap it up with some plastic wrap or a piece of tin foil. Then put the cake inside of an airtight container. The leftover cake typically lasts in the freezer for 2-3 months without any issues.

Can I Make this into a layered cake?

Absolutely, you can make this vanilla crazy cake into a layered cake. You will need to spray some round cake pans with non-stick spray. Bake them at the same temperature, but for less time. Keep an eye on the cakes, and when they are done, you’ll need to remove them from the oven. Let the cakes cool all the way, then add frosting.
