When I was raising younger kids, all our meals had to include tater tots. The toddlers demanded it. If there were no tater tots, my littlest ones wouldn’t eat it. They only wanted tater tots. In those days, I had to find creative ways to use tater tots as an ingredient in most of my entrees. So, they only wanted to eat tater tots? I gave it to them in every form. And that’s how I stumbled upon this amazing cowboy casserole meal. It’s a hearty dish filled with ground beef, onion soup mix, and cheese. And of course, tater tots. The tater tots are the first thing you see, so my kiddos accepted it.

It’s possible this dish was made to serve hungry ranchers, but I think it’s possible that cowboy casserole was born because some mom somewhere couldn’t get their cowboy-obsessed toddler to eat anything except tater tots. I guess I’ll never know.

Cowboy casserole is a budget-friendly, kid-pleasing meal that my whole family loved back in the day. It’s a great dish to make for nights when my kids have their friends over. It’s also great to bring to potlucks, parties, or buffets. I’ve been making this for a long time, and now I’m sharing it with you.

Why You’ll Love Cowboy Casserole

I loved this meal because it fulfilled my child’s need to eat tater tots, but there were other things I loved about it too. The recipe is very easy to follow (which is great when you’re raising little ones who take most of your time and attention), takes very few ingredients, tastes great, and it’s versatile. I know that the recipe sounds a little silly, but everyone in my house came to love this dish. If you try it, I think you’ll find that people in your house ask for it again and again.

I think this dish is also budget-friendly, which is nice if you’re a young family trying to eat well and cheaply at the same time. One more thing: it’s easy to customize (which is essential if you’re trying to make kids happy). You can leave ingredients off, add ingredients, and swap as you see fit.

Ingredient Deep Dive

Ground Beef

I use ground beef in this recipe, and most other versions of cowboy casserole do too. That doesn’t mean that you have to use ground beef if you don’t want to. If you’re looking for a heart-healthy alternative, I recommend ground turkey. 

If you’re a vegetarian, you might consider pinto beans or a plant-based meat (they have lots of options at the grocery stores now!). If you do use ground beef, don’t forget to drain any excess grease from the pan before including it in the dish.

Frozen Tater Tots

Frozen tater tots are, as I already explained, the crown jewel of this recipe. If you’re trying to make a toddler happy, those tater tots will bring them running. I mean, who doesn’t love tater tots? 

And, as the person preparing the dish, you’ll find that the tater tots add a lot of flavor, substance, and texture without making a ton of work for you. In other words, adults and kids alike will love this addition.

Cream of Onion Soup

This recipe calls for cream of onion soup, but I’ve always found that the “cream of” soups can be used almost interchangeably. I’ve used cream of chicken, cream of mushroom, and even cream of celery to make cowboy casserole (because sometimes, I’m just not prepared and don’t want to go to the grocery store, haha!). 

Don’t forget that you can also make any “cream of” soup homemade, if you want, using a combination of ingredients like milk, flour, butter, and salt.

Shredded Cheddar

I prefer shredded cheddar, and I think that kind of cheese goes really well with this particular dish. That said, there are lots of options that you can choose from, not just shredded cheddar. For example, colby jack works well, as does the shredded blends you can buy at the grocery store (like Mexican cheese blends for tacos). 

I do recommend using the pre-shredded cheese that comes from the grocery store because you’ll save yourself time and trouble.

How to make Cowboy Casserole:

Step 1. Preheat the oven to 350 degrees. While the oven is preheating, spread ½ of the tater tots in a single layer on the bottom of a well-greased 9×13 baking dish.

Just so you know, the bags of tater tots I used to buy were quite large. You may need to buy two of them just to get the same number of tater tots for your casserole. You’ll have to gauge how many bags of tater tots you need when you’re shopping.

Step 2. Place the meat and onion into a skillet over medium-high heat and cook until the meat is completely browned and the onions have softened.

You’re ready to dish this mixture into the casserole when there are no pink parts remaining on the ground beef, the onions have softened and are sizzling in the pan, and the room smells fragrant and delicious. Stir in the garlic and saute for another 30 seconds.

Step 3. Mix the soup into the beef and onion mixture, then add milk, corn, sour cream, cheese, salt, and pepper to taste, and stir to combine with the meat mixture.

Spread the meat mixture over the layer of tater tots. This part can get tricky because the tater tots don’t want to stay in place while the meat mixture is being laid down. You’ll have to be gentle as you do this, or your tater tots will end up in a pile at one end of the pan (I’m speaking from experience).

Step 4. Place another layer of tater tots on top, then sprinkle with the remaining cheese.

A word about this: I always used just enough cheese that the tater tots would still be visible, but if your kids love cheese (I don’t blame them, it is the secret to happiness), you may need to use more. The more cheese you use, the more of a chance there is that the tater tots will get a little bit soggy. This is why we cook the cheese at the end of the meal.

Bake 30-40 minutes until the tater tots are crispy and the cheese has melted.

Step 5. Bake 30-40 minutes until the tater tots are crispy, the soup is sizzling in the pan, and the cheese has melted. You’ll know it’s ready when the tops are golden brown on top.

I recommend serving right away so the cheese stays beautifully melted and fragrant while you’re eating. If you’re serving to little children, however, you may want to serve it after it’s been sitting for a while, because this will prevent your children from burning their tongues.
