- Zucchini (finely grated)
- Salt
- Egg
- All-purpose flour
- Parmesan cheese
- Salt
- Freshly ground black pepper
- Canola oil (for frying)

How to make Zucchini Parmesan Cheese Fritters:
Step 1. Place the grated zucchini in a large bowl.
Step 2. Add salt. Stir to combine.
Step 3. Set the bowl aside for about 10 minutes.
Step 4. Transfer the zucchini to a clean dish towel.
Step 5. Squeeze the liquid from the grated zucchini.
Step 6. In a large bowl stir the egg, then add the flour, Parmesan cheese, salt, and pepper.
Step 7. Whisk to combine.
Step 8. Add in the zucchini.
Step 9. Stir to mix well.
Step 10. Add the oil to a medium skillet, heat to medium-high temperature.
Step 11. Using a tablespoon slowly add the zucchini mixture to the hot skillet.
Step 12. Cook the zucchini fritters until golden brown or about 5 minutes.
Step 13. Remove carefully from the skillet.
Step 14. Place on a serving plate.
Step 15. Top with Parmesan cheese and salt.
Step 16. Garnish with sour cream.

- 3 large zucchini, finely grated

- 1 large egg
- 5 Tbsp all-purpose flour
- 4 Tbsp Parmesan cheese
- ¼ tsp salt

Instructions
- Place the grated zucchini in a large bowl.
- Add salt.
- Stir to combine.
- Set the bowl aside for about 10 minutes.

You will need to be sure that the Zucchini and Parmesan Cheese Fritters have cooled completely. Place the fritters into an airtight container and place them into the refrigerator. They can be stored for up to 3 days in the refrigerator.

The Zucchini and Parmesan Cheese Fritters are easy to reheat. They need to be placed on a baking tray and put into a preheated 350* oven. Heat for 10 to 15 minutes.
Can the Zucchini and Parmesan Fritters be frozen?
The fritters should be placed in a single layer on a baking tray and placed into the freezer. This will flash-freeze the fritters. Leave the tray for up to 3 hours. After that, place the fritters into an airtight container with wax paper between the layers. The Fritters can be stored in the freezer for up to 3 months.
