Cowboy Casserole is a hearty dish that is filled with Ground Beef, onion soup mix, and cheese. There are Tater Tots topping the casserole with even more cheese. Add in a can of Sweet corn to amp up the flavor level. This dish is filling, hearty and flavorful.
I imagine that this is what was made on the range for hungry ranchers. Obviously not Tater Tots, but with a form of potatoes.
