You can also mix in some ground pork for a richer flavor. A lot of cooks do two-thirds beef and one-third pork. If you’ve only got 90/10 in the freezer, it’ll still work. Just keep an eye on it so you don’t overbake.
BBQ Sauce
BBQ sauce is what gives this meatloaf its personality. It goes right into the meat mixture and adds a smoky sweetness that regular ketchup can’t touch. I usually use a hickory or mesquite-style sauce. But you can go sweeter or spicier depending on what your family likes.
A honey BBQ gives you more caramel flavor. A chipotle BBQ brings some heat. Use whatever’s in your fridge. There’s no wrong answer as long as it’s a BBQ sauce you enjoy on its own.
Mexican Blend Cheese
This is the layer that pulls the whole top of the casserole together. Mexican blend gives you that gooey melt with a mild kick from the pepper jack mixed in. You can use sharp cheddar if that’s what you’ve got on hand.
Or colby jack for something a little mellower. I wouldn’t go with mozzarella by itself because it doesn’t have enough flavor to stand up to the BBQ and chili powder. You want a cheese that’s gonna show up and be noticed.
Refrigerated Mashed Potatoes
Using refrigerated mashed potatoes is a total time-saver here. You just heat them up and spread them right over the baked meatloaf. They come out creamy and smooth without any peeling or boiling on your end.
If you’d rather make your own from scratch, go for it. Yukon Gold potatoes give you the creamiest result. Just make sure they’re soft enough to spread without tearing the meatloaf layer underneath. You can stir in a little sour cream or butter before spreading for something extra rich.

Instructions:
Step 1: Preheat your oven to 375°F. In a large bowl, add ground beef, then your onions.

Then your egg.

Get your hands in there and mix everything until the seasonings are worked through the meat. The BBQ sauce will turn the whole mixture a darker reddish-brown. That’s exactly what you want. The chili powder should be evenly distributed so every bite has that subtle smoky warmth.
Step 2: Press the meat mixture firmly into a greased 9×9-inch baking dish and bake for 20 to 25 minutes.

Push the meat all the way into the corners and smooth the top flat. You want an even layer so everything cooks at the same rate. After about 20 minutes, the edges will start pulling away from the sides of the dish. And you’ll smell that caramelized BBQ getting sticky and sweet as the top begins to brown.

Step 3: Carefully drain any excess grease from the baking dish. Prepare the mashed potatoes according to the package directions.
Tilt the dish to one side and spoon off the grease. Don’t skip this because too much grease will make the potato layer slide right off. Your meatloaf should look firm and browned on top with caramelized edges. Get your potatoes warm and smooth enough to spread easily. You want them creamy, but not so stiff they won’t spread.
Step 4: Spread the mashed potatoes evenly over the cooked meatloaf layer.

Dollop the potatoes all across the top in a few big spoonfuls first. Then use the back of a spoon to gently spread them out to the edges. Go slow and use a light touch. If you press too hard, you’ll tear into the meatloaf underneath. You want a smooth blanket of potatoes covering every inch of meat. Make it as even as you can so that the cheese melts consistently.
Step 5: Sprinkle the Mexican blend cheese on.

Then add bacon pieces over the potatoes.

Switch your oven to broil and broil for several minutes until the cheese is melted and bubbly.

Watch this closely because broiling goes fast. You’re looking for that golden, bubbly surface where the cheese gets a few toasty brown spots and the bacon crisps up on top. Pull it the second it looks right. Then let your casserole rest about ten minutes before cutting in. That resting time lets everything firm up so you get clean slices.
