I love this soup recipe. It is one of my favorites. This chicken and gnocchi soup is filling and inexpensive to make. Rich and creamy, Chicken gnocchi soup is more than a cold weather meal, it is a true comfort meal.
Can I Use Homemade Gnocchi?
You can certainly use homemade gnocchi. Many people do not want to take the time to make gnocchi from scratch so prepackaged is the best option. However, gnocchi is incredibly simple to make and is fantastic in this recipe.
Can I Use Chicken breasts Instead of Thighs in Chicken and Gnocchi Soup?
Chicken thighs offer a lot of flavor and is usually cheaper than chicken breast. If you prefer chicken breast or find it on sale, it is a great choice in this chicken and gnocchi soup. You can also use a combination of the two if that is what you have one hand. The important thing to remember is to cut the chicken in the same size pieces.
Can I Make This Chicken Gnocchi Soup in the Slow Cooker Instead?
If you do not have an Instant Pot and have a slow cooker, you can still make chicken gnocchi soup. You will make the soup similar to the way you make it in the Instant Pot but it is a slow cooker so it takes 4 to 6 hours on high and 6 to 8 hours on low.
How to Store this Chicken and Gnocchi Soup?
Once this chicken and gnocchi soup has cooled, you want to move it from the Instant Pot cooker and store it in an airtight container. You will want to keep the soup in the refrigerator. This soup will last about 4 days in the refrigerator. If you will not be able to finish this soup before it goes bad, you will want to move it to the freezer. Freezing the soup will preserve the soup to eat it for another time. The soup will stay fresh for about 2 months in the freezer. If you are freezing the soup, you will want to move it to the freezer as soon as possible so that when the soup thaws you have more than a day to eat it. I like to store the soup in single-serving portions so that it can be taken out and eaten instead of worrying about eating the whole batch.
How to Reheat Chicken Gnocchi Soup
When I am reheating this soup, I will heat smaller portions in the microwave but if I am reheating all of the soup, I will heat it on the stovetop in a saucepan. There is no reason to heat the soup one way or the other, this is just for convenience.
Ingredients for Instant Pot Chicken Gnocchi Soup
- Olive oil
- Chicken
- Celery
- Yellow onion
- Chicken broth
- Carrots
- Dried thyme
- Half and half
- Gnocchi
- Fresh Spinach
How to Make Chicken Gnocchi Soup
Push saute and place the oil, chicken, onion and celery into the instant pot
Saute until the chicken is brown
Add chicken broth, carrots, dried thyme and mix until combined
Place the lid on the IP and set the timer on manual for 4 minutes
When the timer goes off, do a quick release
Turn on saute again and stir in the spinach, half and half and Gnocchi
Heat up the soup until boiling
Stir frequently and continue to cook until Gnocchi is cooked
Serve immediately

- 2 C fresh Spinach

Instructions
- Push saute and place the oil, chicken, onion and celery into the instant pot
- Saute until the chicken is brown
- Add chicken broth, carrots, dried thyme and mix until combined
- Place the lid on the IP and set the timer on manual for 4 minutes
- When the timer goes off, do a quick release
- Turn on saute again and stir in the spinach, half and half and Gnocchi
- Heat up the soup until boiling
- Stir frequently and continue to cook until Gnocchi is cooked
- Serve immediatly
