One Pot Mexican Rice Casserole

I love Mexican food, all Mexican food. When I saw a recipe for Mexican Rice, I knew that I had to try it. I will generally throw this casserole together when I have leftover rice from an earlier dinner. I do have to be clear about one aspect of this dish. Mexican Rice is different from Spanish Rice.
Mexican Rice is slightly spicy while Spanish Rice leans more towards a sweeter flavor.

This Mexican Rice can be served as a complete meal or you can serve it as a side dish to accompany other Mexican foods. This dish is easy to make and is a quick meal for days that run late for whatever reason.

Ingredients:
- Ground Beef
- Onion (Diced)
- Salt & Pepper (To taste)
- Taco Seasoning
- Garlic Powder
- White Rice
- Beef Broth
- Corn (Drained)
- Tomato Sauce
- Salsa
- Shredded Cheese
How to make One-Pot Mexican Rice Casserole:
Step 1: In a large skillet over medium heat, add the ground beef seasoned with salt and pepper and cook until brown.
Step 2: Sprinkle the beef with garlic powder and taco seasoning and stir until well-mixed.
Step 3: Add the beef broth to the pan along with the tomato sauce, salsa, rice, and Corn.
Step 5: Stir until well mixed.
Step 6: Cover the pan and bring it to a boil. Adjust the heat to low and continue to simmer for about 18 to 20 minutes or until the rice is tender.
Step 7: Sprinkle the cheese on top and cover again.
Step 8: Allow the cheese to melt for about 2 to 3 minutes.

- 1 lb Ground Beef
- 1 Small Onion, Diced
- Salt & Pepper, To taste
- 2 tbsp Taco Seasoning
- 1 tsp Garlic Powder
- 1 cup White Rice
- 1 1/2 cups Beef Broth
- 1 15 oz can Corn, Drained
- 8 oz Tomato Sauce
- 1/2 cup Salsa
- 1 cup Shredded Cheese

Instructions

How do I store the Mexican Rice?
The Rice should be placed into an airtight container and then placed into the refrigerator for up to 3 or 4 days.
Can I freeze the Mexican Rice?
You can definitely freeze the rice. Be sure it is cooled to room temperature before placing it into an airtight and freezer-safe container. You can keep the rice frozen for up to 3 or 4 months.
How do I reheat the Mexican Rice?
You can heat individual servings in the microwave until the desired temperature is reached. You could also cover it with foil and heat it in a preheated 350* oven. Cover the Mexican Rice with foil if using the oven to prevent crispy rice.

This has a wonderful flavor, and I will be adding it to our rotation. However, I was ready to cover and cook it with the rice when I noticed that I had the diced onion on its plate! I quickly looked over the recipe, and I can only assume it should be added after the beef is browned, before the garlic salt and taco seasoning. I sautéed it separately and added it and everything worked out just fine. You may want to revise the recipe. But it’s DELICIOUS!
