Ingredient Notes & Substitutions
Mild ground sausage: This quick Pioneer Woman sausage gravy recipe calls for mild ground sausage for a classic country gravy taste. However, you can swap the mild ground sausage for bacon or even spicy ground sausage for different flavors. Keep in mind, if you swap the ground sausage for bacon, it’s best to use fresh bacon so you can collect the pan drippings for the gravy mixture itself!
Garlic powder: Garlic powder is not required to make a delicious country gravy. However, if you’re a garlic lover like myself, adding a bit of garlic powder can go a long way in this recipe. You can also chop and fry freshly minced garlic if you’re interested in additional homemade Pioneer Woman sausage gravy ideas.
All-purpose flour: This is always a standard ingredient when making homemade gravy. Unfortunately, almond flour and coconut flour do not always work as well but can be tried if you’re gluten-intolerant.
Whole milk: I always recommend whole milk when making country gravy. If you do not have whole milk available, you can swap it for half-and-half or in some cases, even heavy whipping cream. Keep in mind that heavy whipping cream has more calories and fat than traditionally used whole milk.
How to Make It
Step 1. Brown the meat completely in a skillet over medium-high heat on the stove. Browning the sausage meat is always a must when it comes time to make a homemade gravy. This adds plenty of flavor to the gravy once the mixture is combined.
Step 2. Add the flour to the skillet and stir to combine well. Lower the heat to medium.

Step 3. Mix in salt and pepper to taste as well as the garlic powder. Stir to combine.

Step 4. Whisk in the whole milk and continue to cook until the gravy has thickened. Do not stop stirring during this step. Stirring constantly is necessary to cook the mixture as you go. You can also whisk in more milk to thin out the mixture. If you find the mixture too thin, however, you can also add small amounts of flour to help thicken it up.

Step 5. Serve over biscuits. Enjoy!

FAQs
What is the difference between white gravy and country gravy?
White gravy is a simple mix of a roux made of flour and fat. Then, milk is stirred in until the desired consistency is reached. Country gravy is made from the milk and pan drippings from the meat and then thickened. Some people add in fresh ground black pepper. Either way, both gravies are used for sausage and biscuits.
Notes
You can use either ground sausage or bacon for drippings if you’re going for a country gravy mix. Keep in mind that both produce different-tasting results.

It’s always been a favorite at our house. I have made it for years, never measuring anything. I don’t use the garlic though. My husband actually likes it a bit better made the same way but with hamburger instead of sausage. I always finish that one up with a good dollop of sour cream at the end for a very stroganoff-esqe taste.
I also make this with hamburger and add dice potatoes and serve over toast, it’s delicious.
