For the sausage peppers and onions recipe, I used orange, red, and yellow bell peppers. You will find using a blend of peppers will give you tons of flavor in each bite.
Try my one pan pepper and onions with diced sausage.
What kind of sausage do I use?
For this sausage, peppers, and onions I used Italian sausages. But you can use Kielbasa style or even brautwurst style sausages.

How can you cook sausages without them becoming soggy?
The key is to brown the sausage first in a hot skillet. Then you will add in the peppers, onions, garlic, tomatoes and seasonings.
It will soften the sausage a bit but overall the texture is going to be seared instead of soggy.
What is the recommended cook time for sausages in the oven?
You will simmer the sausage and peppers in the skillet and not bake them in the oven.
Now you could transfer the sausage and peppers in the oven but you will find that simmering in a skillet works just as good.
Do you pre-cook the onions and peppers before adding them to the dish?
You will not pre-cook the peppers and onions before adding to the dish. You will simmer the peppers and onions along with the other ingredients on the stovetop.
How can you tell if meat is done when sausage is cooked?
Your sausages should reach 155-165 degrees internally. You can use a meat thermometer to check the internal temperature of the sausages.
What to Have with Sausage and Peppers
Consider trying oven roasted melting potatoes, Hawaiian rolls, or pair with green beans and sweet potatoes.
Tips
- Make sure to not have the skillet too hot at first to burn the sausages.
- Evenly cut the peppers so they cook evenly in the skillet.
- Swap canned tomatoes with fresh tomatoes if you would like.
- Season to taste.

- Olive oil
- Red bell pepper
- Orange bell pepper
- Yellow bell pepper
- Minced garlic
- Crushed tomatoes
- Onion sliced
- Italian seasoning
- Salt and pepper to taste
How to make Sausage, Peppers, and Onions:
Step 1. Heat the oil in a large skillet over medium heat on the stove.
Step 2. Brown the sausages on all sides for a few minutes, and then remove them from the skillet.

Step 3. Add the onions and peppers to the skillet, and saute for about 5 minutes until they begin to become tender. Add salt and pepper to taste.

Step 4. Place the minced garlic into the pan with the vegetables, and saute for 30 seconds.

Step 5. Mix in the crushed tomatoes and Italian seasoning as well as more salt and pepper to taste.

Step 6. Add the sausages back into the skillet, and cover. Simmer for 20-25 minutes until the sausages are cooked through and the vegetables are tender.

How to keep Sausage, Peppers, and Onions for later?
You can store any leftovers you don’t eat in an airtight container in the fridge for 2-3 days. Just make sure to allow the meat and veggies to cool a bit before you transfer them to a container.
What is the best way to reheat this dish?
For a quick reheat, you can warm the peppers with onions and sausage in the microwave for a minute or two. Or you can toss it back in a skillet with a little splash of water and heat it on low until it is warmed all the way through.
Is it possible to freeze the Sausage, Peppers, and Onions?
You could freeze the leftovers but the vegetables will be completely soft once they are thawed from being frozen. So, you can place it in a freezer container and freeze it for 2-3 months.
Then thaw in the fridge in an airtight container for around 24 hours, then reheat as you would like.
Can I make this recipe ahead of time?
You can prep the vegetables ahead of time and store in a sealed container and store in the fridge for up to 12 hours. Then you can toss in the skillet right before cooking.
I don’t recommend cooking and storing the recipe until you are ready to cook. Then toss in the hot skillet and cook as directed.
What’s the best way to cook sausage peppers and onions in an air fryer?
If you want to air fry, then toss in the sausages and cook them up for awhile first. Then add in the additional veggies and such, and cook like you would in the skillet but skip the oil.
Once the sausage is cooked through, then remove and slice and serve up these tasty peppers with sausage.
