Ingredient Notes & Substitions

  • Sausage: You could use a choice of sausage flavors. Italian sausage, spicy sausage or Polish sausage. Hot or sweet Italian sausage is my go-to. You could also use chicken or turkey sausage if you want a healthy sausage peppers and onions version.
  • Bell peppers: I use a mix of colorful peppers like red and yellow for that sweet flavor. Green peppers work too, but they have a less sweet, more earthy taste.
  • Crushed Tomatoes: This creates the rich sauce that coats everything. If you prefer a chunkier texture, you can use diced tomatoes. Tomato puree also works if you want it smoother.
  • Italian Seasoning: This is typically a blend of dried oregano, basil, and thyme. If you don’t have the blend, a teaspoon of dried oregano on its own will work just fine.
  • Make it spicy: You can add in jalapeno peppers to add extra heat. A pinch of red pepper flakes tossed in with the garlic also does the trick. You need to make this dish so that it works for your family.

Tips for Success

  • Don’t overcrowd the pan when browning the sausage. If your skillet isn’t big enough, do this in two batches. You want them to properly brown, not steam.
  • Slice your peppers and onions to a similar thickness. Which helps them cook evenly.
  • Want a richer sauce? Add a splash of red wine or beef broth after the garlic cooks. Let it bubble for a minute before adding the tomatoes.
  • For an even easier cleanup, use a deep-sided skillet or a Dutch oven to prevent any sauce from splashing out.

How to Make Sausage, Peppers, and Onions:

Step 1. Heat the oil in a large skillet over medium heat on the stove. Make sure the skillet’s nice and hot before you add the sausage.

Step 2. Brown the sausages on all sides for a few minutes, and then remove them from the skillet. They don’t need to be cooked through at this point. You just want to get a good color on them. Set them aside on a plate for later.
