Instant Pot Pork Chops with White Wine Sauce

When you make dinner in the Instant Pot, you can make an amazing meal and still have time to make dessert.

If you are like me, there are many days that I forget to take anything out of the freezer for dinner. Thanks to my Instant Pot, that doesn’t matter. I can make Instant Pot Frozen Pork Chops. Straight from the freezer, the frozen pork chops come out perfect every time.
White Wine for Cooking
Whenever you cook with wine, whether it is white or red, you want to make sure it is a wine you like the flavor of it. When you cook with wine, the flavor becomes stronger and more pronounced. If you do not like the flavor of the wine, you will not like the flavor of the sauce. For this recipe, you will want to use a dry white wine. A dry white wine is any wine that isn’t sweet. While any dry white wine will work, you can look for any Pinot Gris, Pinot Grigio, Sauvignon Blanc, Pinot Blanc, or Sémillon for good options. Sparkling wines are also a good choice.
What is White Wine Gravy
The sauce that these pork chops are smothered in is a white wine gravy. Where a normal gravy is made with either stock, broth or water, this gravy is made with dry white wine. It gives the gravy a unique flavor that is only possible with the wine. The alcohol burns out of the gravy that makes it safe for the whole family to eat.
How Long do Pork Chops in White Wine Sauce Last
When you make these pork chops in white wine sauce, it will stay good for up to 4 days when it is stored properly. When storing the pork chops, put the pork chops and sauce in an airtight container, covered in the inner cooking pot of the Instant Pot, or in a freezer bag.
Ingredients in Instant Pot Pork Chops with White Wine Sauce
- boneless pork chops
- Olive oil
- Seasonings of your choice
- onion
- garlic
- Dry white wine
- mushrooms
- Heavy whipping cream
- Chicken stock
- 2Italian seasoning
- Fresh thyme sprigs
- Salt and pepper
- Butter unsalted
- All purpose flour
- Heavy whipping cream
How to Make Instant Pot Pork Chops with White Wine Sauce
Set the Instant Pot to the saute function, and add the olive oil to it.
Once heated, place the onions and mushrooms into the Instant Pot, and saute until tender.
Add in the minced garlic and dry white wine, and cook down for another minute or two.
Stir in the Chicken stock, Italian seasoning and salt and pepper to taste.
Season the pork chops on both sides with your choice of seasonings, and place them into the Instant Pot on top of the vegetables.
Top the pork chops with fresh thyme sprigs.
Close the lid, and make sure the release valve is set to the sealing position. Set the Instant Pot to manual for 8 minutes. Allow the Instant Pot to sit and release naturally for 10 minutes once the time is complete, and then move the release valve to the venting position to release any remaining pressure.
Take the lid off of the Instant pot, and stir in the heavy whipping cream.
On the stove top, melt the butter, and stir in the flour. Once the flour mixture begins to darken in color, whisk in the ½ cup of heavy whipping cream to complete the roux.
Remove the pork chops from the Instant Pot, and set it to the saute function again.
Mix the roux into the liquid mixture in the Instant Pot, and stir until thickened.
Serve the pork chops with the creamy wine sauce overtop.
