There is no right or wrong type of choices. Roma, Beefsteak or on-the-vine tomatoes are great. English Cucumbers or Persian cucumbers are good, considering they have no seeds. If you don’t mind seeds, any type will do. The onion could be Red, Vidalia or White onion slices.
How long can I keep these marinated vegetables in the refrigerator?
The marinated vegetables do need to be in an airtight container and then placed into the refrigerator for up to 3 days. After that, the cucumbers may begin to soften up.

The dressing is made with Olive Oil water, Vinegar, Basil and salt and pepper. It is sweet and tangy at the same time.

How to make Marinated Cucumbers, Onions, and Tomatoes:
Step 1. Place the vegetables into a large mixing bowl and toss to combine.
Step 2. Pour the water over the vegetables.
Step 3. In a small bowl, combine the oil, vinegar, sugar, basil, and salt and pepper to taste. Whisk to combine well, and pour this over the vegetables in the bowl.
Step 4. Stir to coat the vegetables well and allow to marinate in the fridge for at least two hours before serving.

Instructions
