And this man had zero food ready. His wife looked at the crowd, then looked at him. She turned around and went inside. Twenty minutes later she came out carrying this enormous bowl. Spaghetti Noodles

The spaghetti is what gives this salad its name and its fun, twisty texture. Those long strands hold onto dressing better than a lot of shorter pastas. You want to cook it until it’s just barely al dente.

A little firmer than you’d normally eat it. Because once it sits in the dressing overnight, it softens up more. If you overcook it now, you’ll end up with mushy noodles by the next day. Rotini and penne both work if you’d rather use something different. They’ve got grooves and ridges that trap dressing in every little pocket.

Italian Dressing

The Italian dressing does two things in this recipe. It’s the sauce and the marinade all at once. You toss it with the pasta and veggies while everything is still at room temperature. Then as the salad chills, the dressing works its way deeper into every ingredient.

I use store-bought because I’m not making my own from scratch for a pasta salad. But if you’ve got a homemade version you love, go for it. Just make sure it’s got enough vinegar. That tanginess is what cuts through the richness of the Parmesan and keeps the salad from tasting flat.

Cherry Tomatoes

Cherry tomatoes bring juicy pops of sweetness you need in a cold salad like this. I slice mine in half so they release some of their juice into the dressing. That little burst of tomato flavor mixes with everything and gives the whole bowl a fresher taste.

Grape tomatoes work just as well if that’s what you’ve got. You can use diced Roma tomatoes in a pinch, too. Just avoid regular slicing tomatoes because they dump too much water into the dressing and make the whole salad soggy.

Red Onion

Red onion adds a sharp bite that keeps this salad interesting. Without it, the whole thing leans a little too mild. You want to slice them thin. Paper-thin if you can manage it. Thick chunks of raw onion will overpower everything else in the bowl.

If raw onion is too strong for your family, soak the slices in ice water for about ten minutes before you add them. That takes the harsh edge off but leaves the flavor behind. A sweet Vidalia onion works if you want something mellower.

How to make California spaghetti salad?

Step 1: Cook the spaghetti according to the package directions until it’s just barely al dente.

Cook the spaghetti to your liking, rinse under cold water, and drain well.

You want it slightly firmer than you’d normally eat it because the noodles soften more once they sit in the dressing. As soon as it’s done, drain the pasta and run it under cold water until the noodles feel cool to the touch. Then give the colander a good shake to get rid of any extra water. The pasta should feel dry and a little sticky. Not slippery and wet.

Step 2: Chop your vegetables into bite-sized pieces and toss them into a large bowl with the cooled spaghetti.

In a large mixing bowl, combine the spaghetti, red bell pepper, green bell pepper, cucumber, zucchini, tomatoes, red onion, and black olives.

Halve the cherry tomatoes. Dice the bell peppers and cucumber and zucchini into small cubes. Slice the red onion as thin as you can get it. Drop in the black olives. You want a good mix of colors in there. Keep everything roughly the same size so every forkful gets a little bit of everything.

Step 3: In a separate bowl, whisk the Italian dressing with the Parmesan cheese and sesame seeds. Then add the paprika along with the celery seed and garlic powder.

Step 4: Pour the dressing over the pasta and vegetables and toss until everything is evenly coated.

Use tongs or two big spoons to lift and turn the pasta from the bottom of the bowl. You want every noodle and every piece of veggie covered in that seasoned dressing.
