Should I peel shrimp for kebabs?
You should peel the shrimp for the kebabs but leave the tails on.

How do you put shrimp on skewers?
If using wooden skewers, make sure they have soaked for at least 30 minutes before using them on the grill.
When putting shrimp on skewers, make sure to poke the skewer through the meatiest part of the shrimp towards the top. To ensure the shrimp do not spin around when needing to be flipped, run a second skewer through the middle to the bottom part of the shrimp, right above the tail.
For this recipe, you will not be threading the shrimp in the above manner because they are going to be supported by the sausage. Each slice of sausage will fit right into the natural curve of the shrimp, will keep them from moving, and will hold them in place on the skewer.
How to grill smoked sausage?
Grilling smoked sausage can be a little tricky if grilled too quickly. Since it is usually pre-cooked, grilling is best using a zone method. This means to preheat the grill on one side only. When heated, grill on the unheated side and place the cover on the grill. After 4 minutes, turn the sausages and grill another 4 minutes. After those 4 minutes, place the sausages on the heated side and char or brown the sausages to your liking. This should only take a couple of minutes and the sausages are ready to eat.
Smoked sausage has already been pre-cooked, so grilling is basically just heating it to the appropriate temperature. With this recipe, shrimp also does not take long to cook, so these two proteins pair well together as kabobs. As mentioned above, you are placing the cut sausages inside the curve of the shrimp and threading them together onto the skewers. This will firmly hold the shrimp and sausage together onto the skewers. After a few minutes, turn the skewers, give them another 2 minutes of grilling and they should be ready to eat.
What happens if you don’t peel shrimp before cooking?
Not peeling the shrimp before cooking makes it harder to peel because they will be too hot to touch when they come off the grill. They also lose most of the Cajun seasoning and grilled flavors because that would have been on the peel rather than the actual meat of the shrimp.
How to serve Sausage and Shrimp Kebabs?
Each person can be given a kabob, or you can remove the shrimp and sausages from the skewers and serve on a platter along with the side dishes. These can be served for a bar-b-que or a nice dinner for two depending on the sides you prefer. Some suggestions for sides are:
- Coleslaw, beans, and fruit salad
- Pasta, salad, a bread
- Potatoes, vegetable salad, and dessert
Tips:
- Soak bamboo skewers for at least 30 minutes before grilling so they don’t burn
- Place shrimp and sausage together on the skewers to reinforce the shrimp when turning
- Do not overcook

Step 1. Preheat the grill to 350 degrees.
Step 2. Mix together the shrimp and sausage in a bowl.
